Just chage the filling with mince hard boiled eggs some olives and a little bit of onion. Just deppending on the size, make mini calzone with the filling i wrote here and you will have empanadas from Argentina! Edit: remember that the dough is thiner😉
Yeast is really tricky to work with, keep that in mind. It's a living organism that's easy to kill and fairly picky about what it eats. Make sure you get the exact right yeast the recipe calls for, in this case "instant".

To make it more Italian, use prosciutto instead but if not accessible, use deli ham.
If you put the egg wash before you put the sauce and fillings you can keep your brush clean.
