    I'm transitioning my family to a more vegetarian way of eating, for health more than anything. I love than I can come on here and find endless recipes for not only healthy, but delicious and easy recipes!

      Same here. It's better for the body and for the planet, and it's so cool that there is simple but delicious cuisine out there. These ingredients are so rustic and humble, but so delicious. Blown away!

      @@simontemplar3359 my favorite foods are Italian, Spanish/and Mexican, and Portuguese.
      Italian, and foods from Spain are some of the easiest and delicious food to make.

    I recently found your site and have been spreading the word. Not only are the recipes easy to source and make I think one of my favorite things is that they are small portions for 2, not large enough to feed an army. BTW love the saffron you recommend. I also appreciate that most recipes fit in seamlessly in to the pescitarian diet I'm starting to follow.

    Collars works well in this recipe, a variation of Caldo Gallego. For some when cooking collars, you can boil the collards for five to ten minutes or longer to make a collards wine. Its a bitter but tasty collards broth. Afterwards, you can incorporate it in the recipe. Much thanks, great show.

      You can also cook it like collard greens, as a salad with carrots, Blueberries, walnuts and dried cranberries, with a citrus dressing. It works in any smoothie or stew recipe.

    Here in way North Kalifornia we live about 175 miles from Corning, where the olives grow. The vast majority of the fruit is pressed varietal style, all unfiltered. A .5 liter bottle of Arbequina Unfiltered oil is $16. Not inexpensive, but excellent quality being last years harvest. Way more costly then where you are Albert, but our super low Cannabis prices make up for it:).

      They have the hot smoked one, which is the most important one in this recipe, hopefully they will get sweet soon, you can use any other spanish sweet paprika you can find in the meantime :) much love

    What does a bottle of Decent olive oil cost in Spain?

      I just bought a 3 ltr Extra Virgen Olive Oil and it was 18,34€ our local supermarket brand, or if I get the one directly from the olive co-op where I live that would be about 20€

      If you live in a producing region you can get quality quite cheaply but it does depend on the olive type. The light Verdial in Malaga (produced by cooperatives) will get you 1.5 litres of extra virgin grade for $5 euros. Top quality extra virgin, single variety, produced in Cordoba or Jaen (Jaen produces 20%) of the world's olive oil) will cost about $10 euros. Most folk in Spain use cheaper blends but you can get a lot better for not much more.

      In my town, which makes their own olive oil, a 5 liter bottle of first press EVOO runs about 28€, considering the amazing quality, it´s farily cheap in my opinion

    Cannot wait to make this one. Problem is finding decent tomatoes. What can I use as a substitute. I am guessing it is hard to sub fresh tomato because when you reduce it down to a soup base, there are a whole lot of changes that occur to the tomato to render a rich stock.

    Do you have a recipe for stuffed calamari that doesn't use tomatoes in the sauce? My Mother was from north western Spain, she did not leave her recipe when she passed and I can't replicate it. Thank you.
