Quick Pickled Onions! No sugar, No salt, No boiling!

  • Hope you enjoy this super quick and easy method for making quick pickled onions! No sugar, no salt, and no need to boil anything! WFPB and healthy, I love these on salads, burgers or in wraps. Enjoy!

    Quick Pickles:
    Red onion, sliced (or any other veggie you'd like)
    1 cup water*
    1 cup vinegar (I use apple cider vinegar)
    Any seasonings you like (peppercorn, whole garlic cloves, chili, fresh dill, fresh rosemary, etc.)
    *The recipe amount can be increased depending on the size of your jar. Just use a 1:1 water to vinegar ratio to increase (i.e. 2 cups water + 2 cups vinegar).

    Hi, Maddie! I finally gave this recipe a go after watching the video several months back. My onions are now sitting in the fridge in the ACV/water mixture, along with a few mustard seeds, bay leaf, a pinch of oregano, and some grinds of peppercorn. I plan on using this primarily in tacos, and I know they will be delicious. I enjoy all your videos, and I love your upbeat, down-to-earth personality. Seeing you on the screen always makes me smile 😊

    I love pickles like these! I do this with rice wine vinegar, daikon radish and carrots. It's amazing!

      YES! I do it for a few different kinds of veggies. Sometimes carrots and daikon which we use for banh mi (Vietnamese sandwiches) and sometimes with cucumbers for quick pickles. 😋😋

    This recipe is great. I have to watch my BP and I don't consume sugar, instead I use stevia. Two thumbs up 👍👍.

    I have never made pickled onions before, if I had to know how easy they were to make I would have made them years ago, they are delicious and can be used on the side with many dishes

    Preferences are dangerous, You must use 50:50 water and vinegar for long term safe "quick" pickles. You can rinse them off when you use them.

    I pickle my onions the same way, but this isn't a quick pickle. This method usually takes around 24 hours for the pickle, otherwise it's more of a marinated onion...Either way, I'm sure they're delicious.

    These are great when you're in a "pickle" and need them in a hurry! lol But when I have time, I like to add about 1/3 cup of liquid from another ferment (or just add a piece of cabbage to the top of the onions to introduce plenty of good microbes, or else you can buy a starter if u don't have either). Add whatever herbs/spices you like, pack it down, and add barely enough water to cover. Add a lid and seal tightly to keep air out, then just let them sit on the counter for a couple of days to ferment. Voila, Free probiotics and a happy gut microbiome😍. (If you let them ferment longer and aren't using an airlock, remember to crack the lid briefly once or twice a day to let the gasses out.)

      @@LetsEatPlants Canning can be risky... but nature perfected fermentation! It's great for boosting immunity and is super easy! As long as you keep the air out of your fermentation vessel it will be risk free and fine! The only real concern is exploding your jars if you aren't using an airlock or if you forget to "burp" them. But I have a new nifty pandemic inspired tip tho... I had a nice gallon jar with no lid that I wanted to use for making a big batch of sauerkraut. I had bought a big box of disposable rubber gloves early in the pandemic and had an aha moment one day... Attaching the base of the glove around the rim of the jar created a fantastic expanding seal that I couldn't forget to "burp"!

      Definitely not shelf-stable! These are not the same as canned pickles. 😊
      Keep them in the fridge, they should last for about 2 weeks. Enjoy!

      No need! This is just a “quick pickle” so we don’t need boiling water. So we will need to keep these in the fridge. Enjoy!

    So why do most other recipes recommend flash boiling the onions in water first, or if not boiling the vinegar/water mix and pouring that on the sliced onion jar?
    What does the boiling bring to the final result?

      That's a great question! To be honest, I'm not a pickling expert, so I google it. I found that it's mainly to help "meld the flavors together and can help speed up the pickling process", so I believe it is just for taste preference. I have also read it can help dissolve the salt/sugar better, but since I didn't use salt or sugar here I obviously didn't have that issue. 😄😄 Also, this is for quick pickles that are kept in the fridge... not shelf-stable! That is a much more involved process, so definitely don't mix those two up. 😊 Hope this helps!

      Its to sterilize the jars or contents for preservation and to blanche the veggies some what.

      They should last for around 2 weeks (I think mine have lasted for about a month before, but to stay of the safe side I’ll say a couple of weeks. 😉) Make sure they are kept in the fridge too. 😁😁

      Great question! Technically, no! I’ve done this with other veggies (such as cucumbers, carrots, beets, etc.) and it works well!

      2-3 weeks as long as they’re refrigerated in an air-tight container. 😄 I have not tried reusing the brine, so I’m not sure about that. Personally, I wouldn’t reuse it just to be safe, especially since it’s not too expensive to make a new batch. 😊

      Definitely not! It’s a quick pickle recipe, so it should be kept in the fridge only for a few weeks. Definitely not a shelf stable/ canning recipe! 😄😄
