Thank you for this . Can I use corn flour as a thickner?

Using rice flour instead of corn flour to thicken payasam makes a noticeable difference. Rice flour provides a smooth, creamy texture and blends seamlessly with the flavors, maintaining the traditional taste of the dish. In contrast, corn flour thickens quickly and creates a glossy, slightly gelatinous texture that may alter the payasam’s authentic feel. While rice flour takes longer to cook, it ensures a more traditional and delicate outcome, making it the preferred choice for payasam. Corn flour can be a quick alternative but may change the texture and flavor.

It was yummy , but my friend complained not to put jaggery in water

The reason for putting Jagger in water is to remove impurities present in it . You can add directly but all that gets added to the dish .
