  • A Healthy and tasty Ginger Preserve which is called Alyache Doss. It's a sweet translucent ginger bits tasty to eat.
    It's a Mangalorean/Konkan coastal special preparation. Tender ginger is used in the making which has no fibres in it.
    Tender ginger is available around the konkan coastal reagion in August to mid of September.
    It's a simple preparation but takes lot of time cooking on slow flame.

    1 Kg Ginger
    1 Kg Sugar
    1 Lemon
    1 Egg

      Thank you so much , this is the traditional recipe how my ancestors made. Soaking helps in making ginger soft and remove the excess spicyness and make it perfect to eat

    Recipe is authentic. But I feel that the yellow of the eggs should not be added for clearing the sugar syrup.

      That's how my grandmother used to prepare. Every year I prepared this in same way and it is just to clean the impurities and don't leave any kind of bad odour. You can give it a try without adding the yellow part. Happy cooking. Thankvyou
