  • Let’s make Mango Mochi Ice Cream, ice cream wrapped with mochi. The unique texture makes this one of the most popular sweets in Japan. It takes many steps to make the mochi ice cream but the taste is really amazing!
    How to Make Mochi Ice Cream

    50g Mochiko or Shiratamako - Sticky/Sweet Rice Flour (1.76 oz)
    75g Granulated Sugar (2.65 oz)
    100ml Water (3.38 fl oz)
    1 tbsp Mango Jam
    1 tsp Mizuame - a type of Japanese sweetener or substitute: 25g/0.9 oz granulated sugar
    Potato or Corn Starch (about 100g/3.5 oz)
    300ml Mango Gelato (1¼ cups)

    When the ice cream firms up, it's ready to serve :) It might take couple hours to firm up. It depends on the temperature of your freezer.

    I tried this recipe for the first time today and it was hilariously messy!! I made mistakes, but I had a lot of fun! I should have let the mochi cool a bit longer before putting it in the freezer. Also, I made the mistake of rushing the freezing process - the mochi ended up way too sticky when trying to fold it over. Next time, I swear Chef, I'll get it right..!

    You can substitute 25g/0.9 oz sugar for 1tsp mizuame. Adding mizuame or sugar prevents the mochi from hardening when it is stored in the freezer. The reason Chef uses mizuame instead of sugar is she wants to make the mochi less sweet :)

    I tried this recipe today almost exactly, except I used mango nectar from a juice can and honey instead of the jam and mizuame. I also used mango sorbet instead of icecream or gelato. For those thinking of trying it, you'll either love it or hate it. I really liked the texture and squish of the mochi on the sorbet, but my brother had to apit it out because he hated it (he's not a fan of asian food in general for some reason though). So keep that in mind before trying, because it is very time consuming! ^~^

    Heat the mochi a little at a time using an 800 watt microwave :) Chef heated the mochi for 2 minutes, mix until smooth and then heated additional 40 seconds with a 600 watt microwave.

      if you put normal plastic wrap, it'll obviously melt

    You can't substitute powdered sugar for potato starch or corn starch. The starch will prevent the mochi from sticking. Sugar will not work for that purpose.
