For people who want to try mochi ice cream.lol they sell it already made at trader joes!! I've had it from a few dif places love it very delicious. Thanks for this video , it is great! And ur dog is so cute lol that hat it looks like he is taken good care of :)
You can substitute 25g/0.9 oz sugar for 1tsp mizuame. Adding mizuame or sugar prevents the mochi from hardening when it is stored in the freezer. The reason Chef uses mizuame instead of sugar is she wants to make the mochi less sweet :)
Heat the mochi a little at a time using an 800 watt microwave :) Chef heated the mochi for 2 minutes, mix until smooth and then heated additional 40 seconds with a 600 watt microwave.
You can't substitute powdered sugar for potato starch or corn starch. The starch will prevent the mochi from sticking. Sugar will not work for that purpose.
I tried this recipe today almost exactly, except I used mango nectar from a juice can and honey instead of the jam and mizuame. I also used mango sorbet instead of icecream or gelato. For those thinking of trying it, you'll either love it or hate it. I really liked the texture and squish of the mochi on the sorbet, but my brother had to apit it out because he hated it (he's not a fan of asian food in general for some reason though). So keep that in mind before trying, because it is very time consuming! ^~^

I don't know what the person who replied to you originally suggested, but a light agave nectar syrup might be a better substitute since it has a more neutral flavor and won't change the flavor of the jam in the mochi. Agave nectar can be found at most grocery stores.
You could try making a mixture of water and instant coffee powder to add to the mochi mix instead of the mango jam, alternatively use a coffee essence (camp chicory and coffee essence is rather popular for using in desserts). Then of course use any coffee ice-cream or get a vanilla ice-cream, let it soften (it's inadvisable to let it melt completely before re-freezing for safety reasons) and add the same coffee essence you used above, mix it in well and re-freeze.
