I made this for thanksgiving, it was fantastic. I used strawberries instead of raspberries and my family absolutely loved it. The recipe is perfect. The perfect cheesecake recipe. Will definitely be making this again!
I just made it yesterday, my Gosh! It is so delicious! Thank you so much for such an amazing recipe. My husband ate the whole cheesecake last night, him and the baby could not wait until tomorrow. I said the cheesecake is ready and they both jumped from the sofa, my 3 years old tell his dad: papa wait! The pie is mine and runs to me. Thank you so much!

I stumbled upon your channel when I was searching for a recipe for croissants! I am so in love with all your easy, simple, but delicious recipes! I have so far made your almond croissants with puff pastry, , Apple puff pastry, Blueberry lemon scones, and today this cheesecake. OMG- all of them tuned out amazing. hey beth !! i'm a cheesecake freak i've been looking and trying many recipes and to be honest i found delicious ones but they consume time and effort so when i tried yours i can tell you this is MY GO TO RECIPE !! best cheesecake ever ! i changed some stuff like the vanilla bean i used half a pod and added a bit of white vinegar to remove any eggy smell or taste i also topped it with raspberry jam mixed with lime zest and juice for a bit of tang and then topped with blackberries and raspberries

Aw thanks for sharing such a sweet story. I love how food has the power to bring us back to so many wonderful memories. For me it's making things that I know my Italian grandmother made. I never had the chance to meet her in person, but I hear she loved to cook and my Dad always tell me how much alike we are. Making those dishes, does make me feel close to her in a way that other activities just don't compare :)
Made this yesterday for Iftar (fast-breaking evening meal of Muslims in Ramadan) and my family and friends loved it. Thank you Beth ❤ Very gourmet version of a cheesecake. The vanilla seeds look beautiful in cheese filling and the bitter tang of the raspberries perfectly compliments the cake. Next time I’ll probably use 1-2 tbsp more butter for the crust. I used crackers from Germany, since we don’t have Graham crackers here. They seem to need a little bit more butter for the perfect balance, so they’re less crumbly, but not too hard.

This video brought back some pleasant memories for me. Growing up my dad really got into making cheesecake and we would often have many of them lining the counters for friends and other requests every weekend. He's in business but grew up in a baking family so it was second nature to him. I loved helping him and of course, also enjoying his creations :) I wish he still made them!
I'm done with my first cheesecake in my life! In the beginning I was really as you said "how is this possible to stay together without breaking?!" But Al hamdulillah it turned great! Now I've put it in the fridge and I'm waiting 4-5 hours to pass so I can decorate it with strawberries (here the rapsberries are like 200gr for 20usd) so I've decided to make it with strawberries. Thank a lot Beth for the recipe!!! I'm going to try tomorrow another one :) You are amazing!

Hi, Beth! I did this cheesecake for my boyfriend's birthday and he loved it. So did his family. I am so happy. I baked two because the first one cracked. I guess maybe I whipped the filling for too long? I am not sure, so for the second one I whip it for a short time only to combine the ingredients well, and it turned out very beautiful. My boyfriend said this cheesecake is heavier than the cake from Cheesecake Factory (which he likes and doesn't mind) and the sweetness is perfect for him. Beth, I wanna thank you for sharing such a great recipe with us, and I am looking forward to more and more recipes from you. Thank you! And only wish I could show you the pic of the cheesecake, it looked gorgeous!

I used cooking spray and followed the crust making instruction. It turned out perfect and best ever crust. I also applied these particular steps with ginger nuts crust for pumpkin cheese pie too. Everyone loved them! Thanks for the tip Beth. :)t
I baked this cheesecake two times and it has never failed thank you for this awesome recipe. also would it be nice if i put some simple chocolate syrup on top??
If you go that route (but you really don't need to!) you would bake it the same amount of time that the recipe calls for (see description) just in the Bain Marie water bath
Hmmm corn flour would be a bit too gritty, but you could use coconut flour or better yet Rice Flour or Garbanzo bean flour. And yes you really do need to bake the crust first to harden up, otherwise your crust won't form properly. Hope that helps!

Go for the full fat, no light or no fat (this is a dessert afterall lol! #3 Sure 8 Inches will work, you may have some left over batter, so don't try to pour it all in, just use what the pan will hold. And you may not need to bake it as long. Check about 10 mins earlier, if it still jiggles a lot keep baking until set. Happy Bday to your friend! He'll LOVE u for this one :) ha!
OK if you want dependable, then a KitchenAid is for you! I received mine as a wedding present 13 years ago, and it stills performs as well as when I first opened the box! Mine is a Classic 4.5 quart. And I can't say enough good things about it! It's just the work horse in the kitchen. While I've had blenders and food processors bite the dust, the KitchenAid just keeps on purring along! They are HEAVY so I do reco finding a spot in your kitchen and "parking it" there. You'll use it more :)

Yes replace with Cinnamon Graham Crackers (or ginger snaps would be great too!) don't add the creme fraiche, but instead add 2 cups of pumpkin puree, and 3 tbsp pumpkin pie space, then top with whipped cream garnishes, alternating with whole pecans, and place 1 pecan in the center. That would be a great twist for fall :)

Because we were running out of time that day and it wasn't fully refrigerated so it wouldn't have looked as pretty :) Really needs a god 4 hours in the fridge before cutting :) and we shot a new format that day they took more time than we thought! Ha! OK the one dish that I really hate to make, but just LOVE eating and serving is a Buche de Noel. It's a yule log cake that is popular in France at Christmas. My husband of course LOVES it, but it is soooo time consuming! And hard because you have to roll the cake which crumbles and splits apart if you don't do it right! But I get suckered into doing it every year because it is so delicious, my family loves it and it looks so beautiful!! So 1 day I'll have to share w/ u guys! :)
Sure you could really use any kind of cookie or biscuit that crumbles. Chocolate wafers are good, or shortbread would work too. Gingersnaps would be yummy as well! :)

Ha! Because we were running out of time that day and it wasn't fully refrigerated so it wouldn't have looked as pretty :) Really needs a god 4 hours in the fridge before cutting :) and we shot a new format that day they took more time than we thought! But it's a fun one a real time 15mins meal that I shot in my kitchen demonstrating as I talked. You'll see that in about 2 weeks. Stay tuned!

Ha! OK the one dish that I really hate to make, but just LOVE eating and serving is a Buche de Noel. It's a yule log cake that is popular in France at Christmas. My husband of course LOVES it, but it is soooo time consuming! And hard because you have to roll the cake which crumbles and splits apart if you don't do it right! But I get suckered into doing it every year because it is so delicious, my family loves it and it looks so beautiful!! So 1 day I'll have to share w/ u guys! :)
Sure you could really use any kind of cookie or biscuit that crumbles. Chocolate wafers are good, or shortbread would work too. Gingersnaps would be yummy as well! :)
