Jill - I am loving these recipes!!!!!! I went from vegetarian to Vegan 2.5 months ago and I have dropped 2 sizes already. I am not a cook and your culinary creativity has SAVED MY LIFE!!!!!! Please know that new vegans are watching your videos for the first time and are so thankful to you. Look at the animals you are saving along with promoting better health and vitality!!!! I just love you. You make me happy and I wish so bad we were neighbors. Hugs!!!!
Love this recipe! I also added a splash of liquid aminos and a good amount of nutritional yeast to it for a little more of a cheesy flavor. It is so good!! 😍
This is a fine way to introduce tofu. So often, it's thought of as a protein substitute, but that really narrows it's possibilities. We tend to use it more for mayo, cream sauces and dessert. Have you watched the Adonis Cake video, yet?
I came across this (and the related) recipe again this morning and decided to try it. I'm generally a tofu skeptic but have had some great successes. Once the Vitamix had done its thing, I stuck my finger in to taste. I literally laughed out loud! This **really** tastes like Cream of Chicken soup! Who knew the thing we really all loved about Campbell's Cream of Chicken was that it has a curry thing going on in the background? The Vegan Creamy Cheesy Broccoli Rice Casserole is in the oven as I type. Thanks!
LOL! I'm so glad you like this recipe. Cream of chicken soup was a BIG comfort food for me growing up. My Memaw would make Chicken-n-Rice for when I was sick. She would make a sauce pan of Minute Rice. In another sauce pan, she pour in a can of cream of chicken soup, a equal amount of milk, a small can of chicken (white meat of course), then season it with curry powder. A big bowl of rice, soup, topped with those crispy chow mien noodles. Pure kid food.
I was just talking with Jennifer S. over on Facebook about this. She said 'yes'. Her mom used crm of chkn soup as the cream base in her pot pies. I wasn't sure about it, myself. I grew up eating pot pies in the basic flour & cream sauce. Of course, now, I'm totally curious to go off the reservation.
I was skeptical. But I just made it and it was fantastic! I cannot wait to make it with the broccoli and rice for supper tonight. My husbands gonna love it. Thanks for this recipe!
Thank you for the inspiration....my mom used to make cream of mushroom chicken....I missed the flavors....and thanks to you I was able to tweak this recipe and turn it into cream of mushroom instead of cream of chicken....my non vegan son DEVOURED IT!!! Thanx!
What I love about your channel, is seeing you thru the journey, I know you are "oil-free" now but when I watch you older videos, which is where I am now, I like to be able to follow pats recipes and get to know what the future can be. Plus you are entertaining as hell. 👏
Hi Jill, We LOVE YOU and Your Recipes!! Thanks For All That You Do. While checking out the ingredients on the Better Than Bouillon No Chicken Base, I Noticed That It Has Canola Oil In There. I use the brand "Seitenbacher" Their Vegetable Broth And Seasoning Powder Is Really Good To Replace The Bouillon Cubes That I Use To Use In My Recipes. I Also Add It To Hot Water In The Morning For A Nice Hot Cup Of Broth. It Is Very Similar To The Old Cup Of Lipton Soup Broth That, Unfortunately, I Grew Up Drinking, But This One Is A No Oil, Vegan Broth. I Haven't Made This Recipe Yet, But I Will Try It Soon With This Oil Free Broth!! I Want To Try To Make A Very Close Replica Of The Stouffer's "Grandma's Chicken Vegetable Rice Bake" That Several Of My Family Members Use To Love. I Would Like To Make It Vegan, Oil Free And With The "Butler Soy Curls" Because They Contain The Whole Soy Bean!! Have You Made Anything Like This Yet, You May Have And I Just May Not Have Seen It Yet. Please Let Me Know, Thanks Again For Your GREAT VIDEOS!!
Just made a batch this morning...it's delicious! Making a casserole with it later! Thanks, Jill!! I only had extra-firm tofu, so I just added a bit more soy milk and it turned out perfectly creamy!
Can't wait to try this! Going to make a Vegan Chik'n and rice crocpot dish. Thank you for breaking this down for us! I highly doubt I would have figured it out on my own! XD
I looked at the Better Than Boullion (online); I wasn't in love w the ingredients. If I saw it locally I would probably try it out anyhow, but I haven't found a local vendor (shipping on this is silly). I just ordered some Bill's Best Chkn-ish (S&P?) seasoning powder, as well as the beef flavored powder. Have you ever tried this? I guess we'll see!! Teresa
I did find that without some added salt it lacks something. And, I add salt to almost nothing. I have tried Bragg’s Aminos, soy, miso. Also, 1 T prepared mustard is a good addition. It works very well with the curry powder.
your recipes are so good ..i keep saying it n probably sound crazy but ive got my full family hooked on you .... your colli pasta the creamy one omg HEAVEN ...😊
It's like kismet... I have been trying to find a home-made natural healthy version of cream of chicken soup, because it really does make the best casseroles. And I love Better Than Bouillon, it's like you're inside my head.
My tongue is happy! I made this last night and it was AWESOME! I did cut back on the curry powder a little bit because there are curry virgins in my house who would have turned up their noses at it. Also I just have a normal pedestrian blender and a mini ninja chopper that I got at the winter solstice. So between the two I managed to get the tofu creamy. It was about the consistency of cheesecake. I get my tofu at the food Co-op in my town and it's super uber firm. That being said, I think working with my equipment I would use silken tofu next time. I ended up adding 1/2 C cashew milk to my tofu and it was still really thick. I will probably be making this again this week. You ROCK!
Hi Jill I just discovered your channel. I can't wait to try this soup base and casserole. My question is can you freeze the soup to use at a later time?
HI Joanne! I hoped you've subscribed to my channel; I don't want you to miss the new videos. About this recipe, honestly, I've not tried to freeze it. You'll have to put a little up in the freezer and give it a test run. Then come back and let ME know. 😀
I went to Better Than Bullions website to find out where the nearest place they sell the no chicken base would be. Luckily this store 5 mins from my house sells it! However when I got there they were out of stock of the no chicken base. Instead I got the Massel 7's Chicken Style bullion cubes that were only a dollar. Any ideas how I could substitute these bullion cubes for the base? 1 cube is suppose to equal 1 cup of broth. Thanks in advance :^) xo
Now Im only guessing here- find out what happens when you soak the cube in just enough water that the cube turns mushy. If you can get it soft then try adding it this recipe. Go ahead and have a 2nd mushy cube standing by in case you need more flavor.
Thanks for all your great recipes. This is the first that didn't work out fine. I used a little under 1 lb. of tofu (400 gr) and with 1/2 cup of water it had a hummus like consistency. I don't know what went wrong. I just hope the casserole will be good nonetheless.
Can you figure out a recipe to still make the broccoli and cheese vegan without soy? My son is allergic. So we are a dairy and soyfree family. Also really craving a roast or casserole that meets our guide lines. Any recommendations?
+Ashley L Let me look through my cookbooks. I'm trying to remember if it was Miyoko Schinner who has a recipe for "cream of..." soups using rice to make them creamy. I'll get back with you. Give me until the weekend.
Hi I was curious, any reason you don't use soft or silken tofu? It's typically in recipes called for blending. Have you tried it and if so what difference did you see? Thanks!!
To be quite honest, I used firm because it was what I had on hand at the time. I use silken tofu to cream up desserts, cake frosting, and as an oil-substitute in baking. Any texture tofu would work out just fine in this recipe, really.
Looking at your RUclips handle, I'll assume you're looking for a raw ingredient. I don't have an answer for you. I'm sorry to say. If I ever come across one, I will certainly let you know.
doesnt have to be raw I was thinking of making this for my kids but Id rather stay away from tofu. Recipe looks great..didnt know if cauliflower would work or an idea you had...thanks! :)
***** I hope you are not staying away from tofu because of meat industries bull crap claims that soy is bad. Many, many, of generations of asian cultures, can't be wrong. Now check out the many blocks of tofu in the grocery store, ALL non-gmo. :)
+aRawLifestyle I am allergic to soy so I used non-GMO cornstarch to thicken it and a can of coconut cream to make it creamy. Gave it a coconutty flavor but it was still tasty. Next time I will use less coconut cream.
Sweetvirgo ReRe Well, I've been on this plant-based obsession for 2 1/2 years now. I love to talk about food, so holler if you ever want to chat. I like to hang out on Facebook as well as here on RUclips. Look up: Simple Daily Recipes.
Hi Jill! I need to pick your brain for a minute. I made this and mine didn't taste like Cream of Chicken Soup at all. It tasted like curry. My husband and daughter are not big curry fans, lol, soooooo after they each had ONE serving I was left with the rest of the 9x13 casserole for myself. Lol that's ALOT for one person, took me a whole week to finish and now I'm curried out!!! How would you recommend changing the ingredients so it actually tastes like "Chicken" and not "curry"? I made your recipe just as noted with 2 tsp of both BTB No Chicken and Curry Powder. I really want to make this again and soon so they will eat it, I think they'll love it if it's not too curry-ish!!! Thanks! Di =)
How about making it without the curry? See how the BTB comes through. Maybe adding more BTB would work. I say play with it. Cut the recipe in half or into thirds until you work out what your family prefers.
I just cant stop thinking about making this into chickN potpie... And here I am two months later re-watching the video. lol... I thought all I needed to get was the tofu but looks like I need a few more spices in my kitchen for this as well.. The hard part will be finding the 'Better Than Bouillon, No Chicken Base'... BUT I AM DETERMINE TO DO IT! lol By the way, I also just watched the Adonis Cake video. YUMMY!
My aunt was looking up the BTB no-chicken base on Amazon. She read many reviews stating the jars leak. I believe that, too. Even when buying it off the shelf from H.E.B. Central Market, some jars are sticky. I hope you find some. And save that Adonis Cake recipe for a special occasion! It's so worth it.
Simple Daily Recipes OMG, Just came home from Wegmans. I got the BTB no-chicken base & BTB no-Beef base (trying to make my reg chili into vegan chili, haven't had it in a year!). The can's were not sticky at all (thankfully). WHY OH WHY are the BTB with animal products Organic, But the Vegan ones are not Organic..... Big disappointment! However, In going to Wegmans for the first time for the BTB products, I found my New Favorite Store! Shopping at Wegmans is like having all the choices you get at Whole Foods, But with Shoprite prices. LOL... I pay $1.99 for a 1lb bag of baby carrots everywhere else, Wegmans has the same 1lb bag for $1.49 OH AND DID I MENTION THEY ARE ORGANIC! Also found Awesome deals on Organic beans for .99c a can! WOOOHOOO!!! I did some SHOPPING tonight! LOL ok ok enough of my ramblings. lol
connie connie ok can't believe I was just getting everything together and I don't have something I thought I had... Onion powder :*( If it was just a half of tsp I would just skip it and see how it came out, But being 1-1/2 tsps, I just can't do it... I have to wait another day :*( Yes I am obsessed with making this one. LOL I really miss my pot pies.. lol
Heather Ryley I made it with cashews, used water instead of milk since cashews are quite creamy, and for a cheesier taste I added some nutritional yeast, and a bit of lemon juice. Delish!!!
Do you think this would make a good base for a chicken potpie? This recipe with mixed veggies in a potpie crust..... I tried a vegan potpie from the store and it was horrible! Let me know what ya think..... please ;-)
LOL.... well let me know if you try it. and If I try it first I will let you know how it turned out... I've never had tofu, so this will be my first time :-/ Fingers crossed. lol... I am also not going to tell anyone that tofu is in it till after they eat it cause no one in my house is a fan of trying it.. LOL.... Sometimes we moms have to be sneeky
I'm laughing because I have all of these ingredients. Plus I'm thinking, duh....curry powder. I went to the mall and had curry noodles . It was soo good and tasted like chicken noodles. I went back to the restaurant and asked the lady if she used chicken broth in it. Note: she told me it was vegan so I felt like she played me. She said no...spices and curry powder. Lmfao. No, no, no, YOU ROCK!!!
Simple Daily Recipes Of course I made this again only this time I used silken instead of firm tofu and it came out perfect!
gonna be making vegan poppyseed chicken recipe and needed this! Thanks!
That was my intentions too lol

Darn, you are good! You got this on the first try. Amazing.
Maybe try white beans, like cannellini beans, which are great for making things creamy.
Hi. Did you press any of the liquid out of the tofu?
I gently hand pressed out the water, but nothing more.
It is amazing. I normally fail repeatedly, give up on it for awhile, then come back around. ;D
Thank you!!! My Thanksgiving casserole dish was saved!!
🙌WOOT WOOT🙌 HAPPY THANKSGIVING!
what to use rather than the tofu? please TY

+aRawLifestyle I am allergic to soy so I used non-GMO cornstarch to thicken it and a can of coconut cream to make it creamy. Gave it a coconutty flavor but it was still tasty. Next time I will use less coconut cream.
Thank u so much
You're welcome, Sweetvirgo ReRe! Have you already made it?
Not yet, I'm going to try the portobello pizza first. Your recipes seem so easy. I'm a beginner vegan so I was super excited to try something new.

Ok will do :)
OH GOOD! Let me know if you think it reminds you of cream of chicken soup or close enough. How are you feeling these days?
I am glad I found you
This came out super thick I added more coconut milk to thin it out it was pretty awesome
Good to know! thank you for sharing!

Yes
when you say teaspoon those look like tablespoons. am I wrong? :)
It's just the close photography making everything look big. I mean teaspoons.
do you think I'd be able to replace the tofu with soaked, raw cashews??
It's worth a try!
Heather Ryley I made it with cashews, used water instead of milk since cashews are quite creamy, and for a cheesier taste I added some nutritional yeast, and a bit of lemon juice. Delish!!!
🙋🏻♀️new subscriber! You’re so cute! I wish my momma talked to me about vegan-ism when I was a kid
Let me know how it works out for you, Erika!

Niiiiice!
Love this sauce, but it needs salt. I am NOT a salt or sodium proponent. But this is bad without some sodium.
Miso, Braggs Aminos, soy sauce, etc…
LOL.... well let me know if you try it. and If I try it first I will let you know how it turned out...
I've never had tofu, so this will be my first time :-/ Fingers crossed. lol...
