if you have a very big wok/pan, you can prepare all at once. the quantity which I prepared serves one person.we usually don't use very big woks like street vendors. so to make it simple I showed like that.if we add all the noodles at a time in the small pan, we cannot mix or toss the noodles properly. so it's better to prepare in batches rather than making all at once.hope you understand.

coriander leaves are just for garnishing. I just followed the method of Hyderabadi Street Food Style.street vendors don't add coriander, green chili. but here they use red chili powder.

I've seen Cilantro added to Chinese soup noodle recipes and certain cold noodle recipes too.
