    I’m not sure if this is a thing, but I’m going to make it a thing. I’ve been making this for about two years now and still it is my favourite way of eating fried eggs.
    It just turn boring fried eggs into a garlic and basil experience with crispy Parmesan edges. There is everything to LOVE with this recipe!
    I sometimes love a really speedy lunch and this certainly comes high up my list when I am rushed for time.
    Cooking red peppers in the air fryer is super speedy and takes about 10-12 minutes. Think of it more like a speedy convection oven, rather than an air fryer. Whatever it’s called, it is certainly not deep frying my food. It is really just cooking my food at 180° in a small drawer!
    I sprayed the peppers in a little extra-virgin olive oil and filled them with chopped onions. Remember not to use one calorie spray oils from the supermarket as these contain emulsifiers that can damage the Teflon lining in your air fryer. I use a silicone liner too and only use olive oil which I’ve put in a glass sprayer.

    So this meal contained just over 30 g of protein which was enough to keep me full up all afternoon, without even thinking about food.
    The chickpea rolls are absolutely incredible. They are so easy to make and actually have 8 g of protein, 5g of fibre per roll, which is a lot.
    Do this meal is completely balanced and has all the nutrients. I need to power me up for the afternoon. Protein, fibre, fats or the BIG 3.
    If you want to make your own pesto, go back a few posts where I make one using wild garlic. Don’t worry if you don’t, have Wild garlic, you can simply use , basil, rocket- arugula or whatever green leaves you have handy. It’s always delicious whatever you use and it’s so much better when you make your own.
    It’s all about proportion. I’m going to do some posts about this’s it’s not always about what we eat, but the proportions we eat them in that make a massive difference to our health and how we process them.
