These lightened up, cottage cheese icebox cookies with cream cheese frosting were so easy to make and another great way to use cottage cheese! The soft, lightly sweet cookies paired great with the cream cheese frosting to make a low point sweet treat! Weight Watchers Points & Calories/Macros and additional nutritional information Included.

Ingredients:
1/2 cup 1% low fat cottage cheese
4 Tbsp Brummel & Brown Spread Made with Yogurt
1/4 cup Unsweetened applesauce
1/½ cup All-purpose flour
1/2 cup Lakanto Classic Monkfruit Sweetener With Erythritol
2 tsp Baking powder
1/2 tsp Table salt
1/4 cup Lakanto Monkfruit Sweetener, powdered
1 Tbsp Plain fat free Greek yogurt
1/2 tsp Vanilla extract
4 oz Low fat cream cheese
In a medium bowl, mix together flour, baking powder and salt.
In a mixer or by hand Cream together butter spread, applesauce, Lakanto classic and cottage cheese until blended.
Add dry ingredients to cottage cheese mixture and stir until combined. Form dough into a log. Wrap in plastic wrap and chill for at least 3 hours or overnight in the refrigerator. Cut into 16 slices and place slices 2 inches apart on a baking sheet lined with parchment paper. Bake at 375°F for 12 -14 minutes or until lightly browned. Let sit for about 5 minutes then place on cooling wrack. Let cool completely before frosting.
For the Cream Cheese Frosting
In a large bowl beat together the cream cheese, Tbsp Greek yogurt, powdered sweetener and 1/2 tsp vanilla until no lumps remain. Frost the cookies when cooled. About ½ tbsp of frosting on each cookie. Refrigerate leftovers. I found they taste even better after sitting in the fridge another couple of hours!

@@AliciaLynnYT someone asked about using an egg for more protein. Could a scoop of protein, then reduce the flour in the amount of the protein powder used?
@@lynnkavanagh7361 I think you could definitely do that. Maybe try replacing 1/4 cup of the flour with 1/4 cup protein powder.
Alicia, these sound wonderful!!! Are they a soft cookie? I had posts put in my gums yesterday, for implants. Right now I’m still on the smoothie, pudding, Shakes etc part of my after care. I’ll
graduate to easy to chew as in soft foods in a few days. You have awesome recipes!!!
They are really soft out of the oven. I put them in the fridge once I iced them and they hardened up a bit more after that, but still fairly soft! That doesn't sound fun, I hope you are doing well and have a quick and smooth recovery!!
I also want to add that when I watched Jarret try a cookie, when he broke it the inside of the cookie reminded of a Lofthouse cookie. I am definitely going to try these, the points are awesome! You can’t beat a 2 point cookie!! Thanks so much for trying these out & sharing the recipe with us.

Could I use an egg in place of applesauce to boost protein?
@@dawnchristine1438 I used the applesauce to cut back on the amount of butter spread I used. So, I would still use it. Or you can increase the butter spread amount another 1/4 cup or use another butter replacement for it. You could definitely add an egg to these if you want though!
the over weight start after American stop eating good healthy fat and protein and did carb with processed fat( corn oil and canola oil ) our brain need healthy fat ( avocados coconut olive oil ) doctors done lots new research that we don’t read and stuck to 40 years old researches 🤷🏼♀️
Very true about avocados and coconut oil. I love them both. I eat avocado almost every day and use coconut oil for all kinds of things🥑🥥
