    Filling (馅料):
    300g pumpkin shedded (300克金瓜,刨丝)
    50g /3 tbsp dried shrimp, soaked and chopped (50克虾米,浸软,剁碎)
    2 tbsp cooking oil (2汤匙油)
    1 tbsp chopped garlic (蒜茸)
    2 tbsp water (水)
    Seasoning (调味料):
    1 tsp chicken stock granules (鸡晶)
    1 tsp salt (盐)
    1/2 tsp pepper (胡椒料)
    Batter Ingredients(米浆):
    250g (2 cup) rice flour (粘米粉)
    40g (1/3 cup) tapioca starch (木薯粉)
    20g (2 tbsp) wheat starch (澄面粉)
    800ml water (水)
    White layer ingredients (白色粉浆):
    50g (3/8 cup ) rice flour (粘米粉)
    40g (1/3 cup) tapioca starch (木薯粉)
    1/4 tsp salt (盐)
    300ml hot water (热水)

    I just tried but its still soggy after it was cool. Any reason why? The top rice floor was firm . I steamed with medium fire n when i tested with fork it was not wet anymore for the pumpkin mixture after steamed for 35mins

      I think the other name for it is tang flour. it's often used to make baozi and dumpling.
