    I modified this recipe for my Instant Pot and it turned out great. I soaked my beans for a few hours in the afternoon before I cooked for dinner, not overnight. I browned my sausage and sauteed the veggies a little first and then put it all the ingredients in the pot with 6-7 cups of water. Cooked for 40 minutes on high pressure and then 20 minutes natural pressure release. Turned out perfect!

    red beans and rice are done nearly every week in our household this is very similar to what I do, you explain this very well

    my mom makes the best red beans and rice! she adds a stick of butter and smoked meat like turkey necks and when they are done she mashes some of the beans and adds them back in and it makes them so creamy and delicious.

    Please don't use the same water in which legumes are soaked. The "old" water is full of compounds extracted from the beans which interfere with absorption of nutrients and digestion (more gas later).
    The point of soaking legumes is not only to rehydrate to cook them faster but also to dump the used water because you want the full nutritional benefits.
    I studied this in food technology classes in my uni.

    Smash red beans against the side of crock pot and it will thicken quicker.

    loving your foodie friday, I currently have my beans in the crockpot. My hubby is not a big fan of beans but when he saw all the ingredients in the crockpot he said it looked yummy, cant wait to try :)

      Same here with the cauliflower rice. I buy the frozen cauli rice (from ALdis) and add it to the crockpot during the final cooking hour :)

      DestiniOfLocs The flavor of the beans is absorbed in the water. just gives it more flavor.

    I love your bowl! Where did you get them? Also, I just saw your DT haul where you bought red beans to use for this. Do the cook as well as the Camellia beans? It's the only brand I buy.

      Epitome16 The fleur de lis bowls came from Walmart about 4 years ago, love them! I can tell a slight difference in the DT beans from the Camellia...they don't break down as much, still good though!

    Baby Girl, You got to change that bean water out and use fresh... You soak them to get out any unwanted dirt, debris and toxins.. #ChefShawn

    We have red beans, light kidney beans, and dark kidney beans. We do not have red kidney beans. I think those which are pictured would be comparable to our light kidney beans here in the North. Thanks for sharing.

    My crock pot died a couple of weeks ago. Would this work in a cast iron dutch oven in the oven? I am not able to work, so I could babysit it all day if need be. But it really looks good & I'm going to have to wait a bit for a new crock pot.

    I shouldn't have watched this before dinner.... Yum! I will have to give that corn bread a try! Do you just chop a fresh jalo for inside? We like things got around here to. We do fresh jalo's in our hush puppies and it never crossed my mind to do the same for corn bread!

    Can you use canned kidney beans?

      Yes just cook them for 6 hours in the Crock-Pot instead of 8 hours

      Use a can of red beans, drain, rinse and then, smash them and add them to your crockpot. Makes them look creamy, not watery.

    Not sure why, but my Red Beans always crack open much more than that when I soak them overnight (almost to the point that they are almost split straight down the middle completely). Also, why do you use the water that it's been soaking in? You're supposed to drain the soaking water, and use fresh water for the cooking.
    Love the Tony Chachere's though! I use that in a lot of my cooking! So many dishes that are enhanced in flavor with that Seasoning there! Love it! I can take something that is bland in flavor, sprinkle some of that inside, and make it taste wonderful!

      Khione When beans split from soaking it usually means the beans are either old or too dry (they are still safe to eat don’t worry), it happens to me all the time too, luckily all my dishes still turn out just fine! also I would never use soaking water in the dish, any outside debris from the bean is in that water plus it’s oligosaccharides (a type of indigestible sugar that causes gas lol)

    I must be the world's worst cook ( I am) because mine smell like garlic ( I should have left that ingrediant out) and they are super soupie.... I'm still going to eat them with my rice and hopefully tomorrow they will be thicker.... oh and even though I soaked my beans (for 40 hours) they are not as soft as I expected them to be. My pressure cooker setting for slow cooker is what I used... I'll use my crockpot next time!!

    The bean soaking water becomes redolent with those few complex carbohydrates which are indigestible by the small intestine, allowing them to pass intact to the large intestine where they ferment during the journey toward evacuation. That fermentation is what produces flatulence. By discarding the soaking liquid and cooking in fresh water, you are eliminating the majority of this problem.

      I did find it strange that she used the same 'soaking' water to cook her beans instead of adding 'fresh' water to cook her pre-soaked beans. I wonder if anyone else noticed that?

    You are supposed to drain beans before you put them in crockpot! The water you measured out into crockpot was dirty!!
