I modified this recipe for my Instant Pot and it turned out great. I soaked my beans for a few hours in the afternoon before I cooked for dinner, not overnight. I browned my sausage and sauteed the veggies a little first and then put it all the ingredients in the pot with 6-7 cups of water. Cooked for 40 minutes on high pressure and then 20 minutes natural pressure release. Turned out perfect!
my mom makes the best red beans and rice! she adds a stick of butter and smoked meat like turkey necks and when they are done she mashes some of the beans and adds them back in and it makes them so creamy and delicious.
Please don't use the same water in which legumes are soaked. The "old" water is full of compounds extracted from the beans which interfere with absorption of nutrients and digestion (more gas later). The point of soaking legumes is not only to rehydrate to cook them faster but also to dump the used water because you want the full nutritional benefits. I studied this in food technology classes in my uni.

Epitome16 The fleur de lis bowls came from Walmart about 4 years ago, love them! I can tell a slight difference in the DT beans from the Camellia...they don't break down as much, still good though!
We have red beans, light kidney beans, and dark kidney beans. We do not have red kidney beans. I think those which are pictured would be comparable to our light kidney beans here in the North. Thanks for sharing.

Also, why do you use the water that it's been soaking in? You're supposed to drain the soaking water, and use fresh water for the cooking. Love the Tony Chachere's though! I use that in a lot of my cooking! So many dishes that are enhanced in flavor with that Seasoning there! Love it! I can take something that is bland in flavor, sprinkle some of that inside, and make it taste wonderful!
Khione When beans split from soaking it usually means the beans are either old or too dry (they are still safe to eat don’t worry), it happens to me all the time too, luckily all my dishes still turn out just fine! also I would never use soaking water in the dish, any outside debris from the bean is in that water plus it’s oligosaccharides (a type of indigestible sugar that causes gas lol)

That fermentation is what produces flatulence. By discarding the soaking liquid and cooking in fresh water, you are eliminating the majority of this problem.
I did find it strange that she used the same 'soaking' water to cook her beans instead of adding 'fresh' water to cook her pre-soaked beans. I wonder if anyone else noticed that?

Same here with the cauliflower rice. I buy the frozen cauli rice (from ALdis) and add it to the crockpot during the final cooking hour :)

ha ha! I actually use the diced kind in the jar. I hate handling them, so that's my easy way around it! Love hush puppies!!
