Sensoji at night is 100% better than during the day. If you go super early in the morning (5-6am) you can also see a bunch of adorable dogs on their morning walks.
I took the 5am train from Akihabara to visit Sensoji. It was empty except for the locals going through there walking their dogs. There was like a group of them with their shibas which was very cute. Downside is nothing is open until about 10am there.
You did go to a top 5 geared towards tourists donki though, in one of the most expensive districts in tokyo. Many of the donki's in less touristy areas are less...touristy... also, there's a whole business case study published somewhere of donki's strategy of just having every need satisfied on the face of the earth, along with a chaotic layout and clutter that leads to more purchases. It's one of the most profitable "store chains" in the world

Mudan: Try visiting a Surugaya, there is a really good one in Yokohama, next to the station, but there is one in Shinjuku as well. Or maybe you can try discovering pop-up shops in general. Japan is famous for its pop-up cafes and shops, but it is not that easy to actually know where and when they are :) .
I went to the Akihabara one at 2 or 3 am and it was the only time it wasn't a zoo inside. It was perfect for me to pick up tons of Kit Kats for gifts when I got back. You don't want to start at the top floor of that one because it's the adult section. In May I had to buy a suitcase from Donki because I forgot to bring a 2nd suitcase and didn't have enough room for all the stuff I bought.
I met a japanese guy in Fukuoka who produces key chains in china and sells them to Don Quijote all over Japan. He showed me karaoke and some Izakaya, which was great since it were my first few days in Japan. So some of those keychains might have been from him.

Big supermarkets like Life, Aeon or what not, espacially after 19:00 so you can get crazy deals on all the daily freshly done stuff like baked goods, sushi, katsudon, you Name it. Would probably also make for a good video that catches people.

That is if you can even call that a curtain, because you can look right below it and see a lot of stuff without even entering the section. That is without even mentioning the section itself.
Yeah, I agree that Donki is really more aimed at tourists. The most notable things I have purchased there (as a tourist) have been some nifty coathangers, some pour over coffee paraphernalia (Hario V60 ftw), and some Japanese skincare that I have to buy from ebay. Everything else has been food, alcohol or souvenirs.
Of course the one in Asakusa would have more tourist bait products because it's in the middle of a tourist area. The stores that are not in tourist areas will have the normal store vibe with more items for daily life.
If you wanted to check out another noteworthy store, you might consider doing a vlog on Loft sometime. Loft is my go-to whenever I need to get birthday or Christmas gifts for people, as their selection is similarly diverse to Don Quijote's, but more upscale. You could also do a Nakano Broadway episode, since Nakano Broadway is just insane and absolutely fascinating, and also feels like a 1980s time capsule. Though you may have done one already, I'm not sure -- I'd be surprised if you've been in the Tokyo area for this long and haven't! Also, I'm never asleep at 3am, as my bedtime is more 4:30 or 5 in the morning, with me then waking up at 11 to prepare for work at 12. ;) ALSO also, my local Don Quijote in Kichijoji is something of a go-to for me for certain specific groceries, as there are a handful of things I can get at Donqui that are either cheaper or better than what I can find anywhere else. One good example is breakfast cereal -- I used to eat bran flakes every morning to keep my insides in check, but I started to want more variety in my breakfast cereals, and there is one cereal in particular that is exclusive to Don Quijote but which I absolutely can't get enough of: green tea granola bits with dried fruits and whole red beans. It may sound odd, and it definitely is, but it's also absolutely delicious!

Very narrow aisles are not unique to Donki, as many shops in Akihabara are that way, or even narrower. My friend tells me the adult stores are also that way.
There are many other Donki's outside of tourist areas. They still get busy but the touristy ones are particularly tough to deal with. Regardless, any donki you go to will be cramped. That's kinda their business model, to cram as much stuff into the store as possible

I got nail clippers in Kappabashi at a knife store and boy are they so nice. They work so well and no effort at all to do my nails. Highly recommend.
