I prefer adding wheat, oats, besan and Millets flour mixing it for roti, It gives very worm earthy smell to the roti and tastes so good that you can eat it just on its own.

Its usually made mixing wheat flour and besan (chana flour) u can get this easily. Rajdhani besan. Wheat Besan Water Make regular dough. Quantity you can check from utube videos

Hi try chile bhature and aloo puri with lassi namkeen and have in one vinegar teasoon mixed in water prior to having meal also add in one some steamed veggies in the meal on side and eat veggies prior to chole bhature
Try different types of wheat. Emmer/Khapli wheat is talked about a lot for its low GI and it being indigenous variety wheat of India. Try it in comparison with hybrid variety like Sharbati wheat, Lokvan wheat, Bansi wheat, Black wheat.
I have heard that the sugar spike results can vary between a non-diabetic and T2 diabetics . Am I correct? If so, please let me know if you are T2 diabetic.
