I love Brioche. I proof the yeast with the milk. Put all wet the ingredients in the stand mixer. Eggs, all the BUTTER, salt , ( sugar, yeast, milk) , after all are in the bowl put ALL the flour in and start on low with hook, after a min. increase speed When it gets slightly sticky (5 min) I take it out slightly flour table, fold several times. , shape into a smooth ball let rise 30 min, punch it down, shape it into a pan shape or rolls and let rise 3 hours and bake it, 350⁰ until golden brown. The mixer does a great job. Smooth right out of the bowl.

Hey, I am a beginner baker with a channel as u can see but don't worry this is not for a video I'm just baking this for me and my family, the point: i mixed all ingredients and did as you said but the mixture was kind of rough falling out (in the bowl), so i decided to knead with hand to get it together, i got it kind of together but after i went to knead it on the table for 15 min and more it was nothing like yours, it did become softer but it did not stretch, anyways then i just decided ill let it in a warm place as u said, it didnt rise that much but it was in the same texture i folded it 3 times as you said now and it is resting for 45 min, i hope you tell me exactly what i should do while i am waiting for it to rise in the mold. Thanks alot for the recipe, ill update you about how it turned out soon

It is almost the exact same way as making chinese/japanese bread rolls, but you only have to make a single large one and call it brioche ! :D Gotta try this

The flour amount could vary a bit depending on each flour, but consider that you don't have to add too much flour to get a soft brioche bread, the dough should be a bit sticky. If you're not familiar with buttery-sticky dough, just leave it at room temperature about for 30 minutes covered with plastic wrap without touching it, them it will be more easy to knead it.

The texture of the dough is more greasy, I feel it is tearing and it does not expand. I added 20 grams of flour and the same is still happening.
