  • Crispy pork belly using an air fryer always delivers me perfect crackling. This time I got inspired by pork kawali, which requires boiling the pork with salt, bay leaves and onion. The smell is so aromatic. Then I pick the pork skin, and rub with a bit of salt. Cook in an air fryer at 200c for 15 mins then reduce to 180c for 10-15 mins depending on the size.

      here in the Philippines we call it Lechon kawali or fried pork. We also have snacks called chicharon its basicly Fried pork but like ultra fried where even the meat is crispy like chipsd

    One thing I've learnt is never crack pepper or salt over boiling water
    Your grindings get stuck to the bottom of your grinder from the steam
    grind into your hand☺️

      Letchong? What an interesting name, because here in Colombia we call "lechón" (which sounds very similar to the way you call it) to young pigs. Like "cubs", and we have "lechona", which is a dish made with rice, peas and a lot of pork meat, which is schreded and mixed with the rice. It tastes delicious, and they skin of upper part of the animal (basically everything above its legs) is completely fried

    We love to eat this in Austria 🇦🇹 too (where the cows are, NOT the kangaroos or "woodforestvillages"!)
    We call it "Kümmelbraten", when we put garlic and Cumin on the top of the pork 🥩 belly.
    Or we prepare it similar to BBQ on the grill.
    Or we'll make roast pork "Schweinsbraten" out of it.
    But we make the BEST out of the skin of the pork belly.
    It is called "Grammeln" and in Germany they call it "Grieben".
    I don't know the English word for that.
    We cut the skin with the fat, without the flesh, in little pieces and cook it without everything, in a deep pan, till the pork fat "Schmalz" or "Schweineschmalz" is coming out and the little pieces are getting golden brown and crispy.
    Then the lard, through a sieve, is placed in a ceramic pot.
    So the crispy grammes remain.
    It tastes best when you put the lard on a fresh farmer's bread and taste sliced onion rings on it and with paprika powder and salt.
    So.... And NOW I'm hungry 🍽!

    I’m sick of everybody saying boiling the meat is bad, meat contains a lot of water as it is and boiling the pork belly will ensure that once you broil (or air fry it) it’s completely cooked through.

      Boiling in water really doesn't add flavor. You see its simple you'd have to add way more seasoning into the water just to season it so you hope the meat gets the salt ? . I'm sorry but if we agree salt adds the strongest flavor , than puting it in water will only disperse the salt. + Haven't you heard of the Millard reaction. Searing adds flavor

      @@jordanowen9079 Pork belly doesn't need extra flavor. It's bacon, you don't need seasoning for bacon. Also the millard reaction happens in the air fryer. Only searing the belly would leave it partially uncooked.

      It's basically an oven that uses very little oil to cook with. You saw that he just put some oil on top of the pork skin before finishing it up. I have one and for some foods, it mimics frying very well while others are still better using an actual fryer. For stuff like fries and chicken nuggets, an air fryer works pretty darn good. For fried chicken, it's good but not great. However, once you mess with it a little, you can get it to be almost there, which is good enough for me as it's way healthier.

    My professor in Cooking Basics1 told us to never boil protein unless you are making a stock with the leftover meat/bones. He said that the flavour is left behind in the water.
    That's probably why people are acting like they are Gordon Ramsey's apprentice in the comments. I've never made this so I have no opinion really. Could be good. Everyone has their own way of cooking.

    Did you electric bill go through the roof when you started using an air fryer? I used mine maybe 2x a week and my bill went up like $30 the first month and then $50 the next month.

      it’s called blanching. it removed a lot of the undesirable flavors from the pork and starts the cook process so that the flavor is even. because it is pork belly you will never run out of fat for the meat to use. this is a common technique used in china for perfect homecooked porkbelly.

    Ive tried em in the air fryer before and they were not gooodd. The skin came out hard. Maybe they didnt do it right. I gotta try it myself. But oven always comes out super crispy for me

    And slice it into thin strips. Then heat the pan, then put butter, then banana ketchup, onions, and chili flakes. After stir frying the pork belly for about 2 minutes, add the sauce then mix it all together.
    It's so good with beer 🍺
