I've been making shrimp scampi for over 30 years. You should butterfly the shrimp wide open if you want the best-tasting scampi and I never preseason the shrimp. Also I find using finely chopped scallion or green is better than shallots. I've never heard of using tomatoes as well. Also it should be cooked over medium-high heat and cooked fast not slow

I love shrimp..in just about any dish..one thing I detest tho?..digging into my dish to pull tails off the shrimp.. I see no diff in the flavor of my dishes on or off so I always remove..don't want guests having to dig in either..
Looks yummy n I love the way you explain every little step n the why's..great for beginners..added ya to my playlist..thanks for sharing..

Scampi are in fact tiny, lobster-like crustaceans with pale pink shells (also called langoustines).
Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations like adding tomatoes, breadcrumbs.
    Scampi
Scampi, also called Dublin Bay Prawn, or Norway Lobster, (Nephrops norvegicus), is an edible lobster of the order Decapoda (class Crustacea). It is widespread in the Mediterranean and northeastern Atlantic, from North Africa to Norway and Iceland,
    Shrimp
The term shrimp is used to refer to some decapod crustaceans, although the exact animals covered can vary. Used broadly, shrimp may cover any of the groups with elongated bodies and a primarily swimming mode of locomotion - most commonly Caridea and Dendrobranchiata.

Keeping the shrimp whole when you plate it up, gives an excellent appearance, however, for actually eating that I would prefer the shrimp to be cut up into bite-size pieces

I started this video just to leave a comment. I only let it play for 5 seconds. I read from other comments that Jessica is very nice, I have no doubt that she is. I am Italian born and raised in Italy I came here when I was 38. I guarantee you that there's no "Shrimp Scampi" in Italy. First of all when you say "Italian" for recipes you are overestimating your knowledge, because recipes, traditions and so on, in the 20 Italian regions change more or less every 10 to 15 miles. Ok Shrimps are sea creatures and Scampi are another sea creature. In southern Italy and somewhere in the northwest coast many people/restaurants make: Linguine with Scampi. There are no Shrimps in there, because Scampi are kind of in between lobsters and shrimps. They taste much better than any shrimp therefore shrimps are not necessary in that recipe. Here they use the term scampi for a "sauce"...LOL LOL. I have now been living in America for over 20 years and I do not eat at "Italian restaurants" they don't know what they are doing, they always overcharge you for no reason and if any of them would present such menus in any part of Italy they would close within a couple of weeks at the most. Again I don't have anything against the RUclipsr, I am just trying to expose the lies of those who use the word "Italian" to make a fraudulent sale. If I have to spend money for good food I will go have a very American prime rib at a very good steak house before I give any of my money to the "Italian wanna be".
