We’re scheduled for an Alaskan cruise on Brilliance next Spring. Only cruised on one other RC ship and I think it has since been removed from their fleet. It was old when we sailed on it.

If kids haven't seen other cruise ships, they'll have a great time. And there are some nice things like the rock climbing wall- just other Royal ships have more to do for them. Not sure on Gluten Free, but every menu does have them!
