  • 食材錶:小麥種子150克,糯米1200克。我們這邊麥芽糖的比例是一比八,就是小麥種子100克,糯米就是800克。
    純手工自製傳統小吃麥芽糖,做法非常簡單,自己在家就能動手做,清甜可口,比外面買的還要好吃!
    麥芽糖在我們國家是一種比較傳統的糖,它本身來說具有的功效是補脾益氣,緩急止痛,開胃,肺燥,滋潤內臟以及通便。
    Table of ingredients: 150g wheat seeds, 1200g glutinous rice. The maltose ratio here is one to eight, that is, 100g of wheat seeds and 800g of glutinous rice.
    Handmade maltose, a traditional snack, is very simple. You can make it at home. It's sweet and delicious. It's even better than the one you bought outside!
    Maltose is a kind of traditional sugar in our country. It has the functions of nourishing spleen and Qi, relieving pain, appetizing stomach, drying lung, nourishing internal organs and defecating.

    I think I'm gonna make some Saké out of this type of stuff, I got some store bought rice, and I may use some native grass seed for the Koji part, but I also have some yeast starter that's a year and a half old now that has way more than just yeast in it.
    When I germinate the seed, I use it right away when the taproot shows, otherwise you will lose yield of sugar to the plant eating it.
    Using native grass to start it, hopefully will give it a unique flavor, and a microbiome not found in store-bought rice.

    You have given only six hour time for fermentation. How it is possible in six fermentation will takes place. Kindly make it clear please. Also advise us if we don't have glutinous rice, can we use other variety?

      It can't be used. You need to keep it dry and not have too much water

      It's wheat not barley , The exact translate of the Chinese name of this type of maltose is "wheat sprout sugar" means sugar made from wheat sprouts.
