I think I'm gonna make some Saké out of this type of stuff, I got some store bought rice, and I may use some native grass seed for the Koji part, but I also have some yeast starter that's a year and a half old now that has way more than just yeast in it. When I germinate the seed, I use it right away when the taproot shows, otherwise you will lose yield of sugar to the plant eating it. Using native grass to start it, hopefully will give it a unique flavor, and a microbiome not found in store-bought rice.
