      I'm not Bernth, 😅 but that's personal preference and there's no "best" setting necessarily.
      For speed however guitarists tend to go as low as possible without fret buzz. This way it takes less pressure to ring a note making you develop a good relaxed technique and it's also less pressure overall putting less strain on your hand and wrist making you able to practice longer and with less risk of damage to your hand.
      I'd recommend going with a low height at first, ask a luthier to set it up as such so the setup is done by a professional unless you know what to do yourself of course, then you can experiment with higher settings later on but it's rare for guitarists to prefer that so Idk.
      Some say that higher is better for sustain and note clarity, but since your question was for "shredding" I'm going to assume you mean "playing fast" and if so, then low is the answer and go to height for 90% of players.

    I wished I knew that a fender strat is not for tuning down, it makes the low e string really sloppy when tuned down.

      It's not any different than tuning any other 25.5 scale guitar really, try using heavier string gauges for more tension.
