If Alfred doesn't like the corn, you can try the plantain version. It's actually not made with plantains, but with a short, stout, and stodgy variant we call "saba" . But I think plantains would be easier to find for you guys. Peel and cube it into 1/4-1/2 in pieces. Boil in simple syrup until it's tender. Then construct it the same way but use banana chips or popped rice for the crispy topping part. Don't add sugar but use the banana simple syrup you cooked with. And try to get shaved ice if you can, the texture is complete different. Or at least crush it finer. Btw, some people use white bread for mango float, it ends up with a more chiffon-y, soft cake texture instead. But add a thin layer of gelatin first at the bottom and the let it cool and harden so it's more substantial. I think that would also be a good thing to try. And have sisig with a sunny side up! Some places that sell sisig for breakfast add fried eggs instead. And use Maggi seasoning if you can instead of oyster sauce to make it more accurate.
Fun Nutrition Fact! Tinola is actually a galactagogue food and is very good for pregnant mommies especially those breastfeeding!! It has muringa, garlic, ginger, chicken, and (you could also put papaya cause it's also good for the mom and baby)! Happy eating!!

Yessss tortang talong is my favourite! My mom and my Lola usually make it with a ground pork mix similar to what we wrap into lumpiang shanghai (aka spring rolls) as well as the grilled eggplant. It just adds that extra oomf that made the torta extra special 😌🙏

Tortang talong is elite. When I was younger, I didn't like it. But now, I can demolish 3 eggplants in one sitting *yo pause*. Chili sauce is not bad, but Banana ketchup and a little dash of Knorr liquid seasoning will put it on another level! :)

And I’m excited to try this recipe! Looks so good! About the Tinola, I would also add garlic, lots of it! Especially if you love garlic, which I know you do. It’s also meant to be very gingery. I normally put double or even triple the amount of ginger that you put. And yes, it is something I cook whenever I’m sick. It’s just so comforting. About the eggplant, I’ve never tried it with cheese. I have one in the fridge and I’m going to try it with cheese tomorrow. Lastly, about the Mais con yelo, this used to be a favourite of mine when I was a kid. I think the ice matters. You need to get an ice shaver, and try it the proper way. It’s also very nice with vanilla ice cream, or even plain without ice cream. Anyway, thank you so much for this video. I really enjoyed it and I’m hoping there’s a part 3!!! Mabuhay!!!

I would really want you to try a CLASSIC CHICKEN CURRY (not that tikka masala or butter chicken) with basic WHOLE WHEAT ROTI, you could even try making DOSA (masala and plain, plain with the chicken curry), some MALAI KOFTA and GOBHI PARATHA (gobhi is cauliflower) & in sweet you could try making KHEER or just some MISHTI DOI!
The only thing that traumatised me on roti is the one in the Indian film "the three idiots", where one of the main characters, Raju rastogi, (along with rancho and Farhan) were in his home with his mom serving them "eczema roti". That eczema cream being used for his ill father *is on the same board* where his mother is making the roti I am NOT demeaning in any way about Indian food but I'm sorry, that movie is what I associate roti with as it's my first time hearing the name of the food

All of these are my favs. But tinola indeed has that memory of being sick and your mom making you some. That soup is like bog-standard Southeast-Asian style soup I guess, chayote, ginger, fish sauce and chicken, which is why it’s so familiar. Like we all grew up with a version.
So happy you're liking Filipino food, Filipino cuisine is savory that's why rice is a staple. Now, you have to try lumpia, sinigang, As for me, tortang talong is best in its simplest form, charred eggplant, egg, salt and pepper; dipped in soy sauce with calamansi, ofcourse best paired with rice. Yum! And it's not as hard to flip cause i just grab it by the stem, no spatula needed 😅
The first recipe reminded me of the Mexican dish called chiles rellenos but instead of eggplant we use poblano chiles stuffed with the cheese!! And we roast the chiles on a comal ( i think a griddle in english ) totally recommend u to try it!! Or any Mexican dish!! 😊
There is a separate filipino dish similar to that one called dynamite. It's green chilli stuffed with cooked ground pork, onions and cheese then deep fried.

As a Filipina who has been following Tina for almost 10 years, this video makes me so happy 🥰 My Dad used to always make me the tortang talong before I go to school when I was little. As someone who never drinks I only eat sisig with rice, haha! It’s my and my husband’s favorite, he is white. Tinola is the dish you want everytime it’s raining or cold outside, and when you’re sick. The mais con yelo is perfect for summer in the Philippines as it gets really hot. You should also try Halo-Halo next time🥰 Tina, Lyla, Alf and Zen got double thumbs up for all your love to our dish♥️♥️♥️

It's called a choko in Australia and was a staple here in the time when people had outside toilets at the back of the garden. Choko vines typically grew next to the passion fruit vine and next to the outside toilet! 🤣

Back when Halo-Halo was booming during the summer and often sold out by the end of the day, vendors got creative and came up with this version using leftover ingredients. Variants included swapping corn with sweetened bananas, adding cream, or even using sweetened young coconut. It’s awesome that you created your own recipe because the beauty of this dessert is all about mixing and matching ingredients!

nice! don't be afraid to char the eggplant until it's black. you're gonna peel that anyways and it'll soften the eggplant to a custardy texture, you should lay the eggplant over a grill so you don't have to hold it up once it's getting softer. as for the egg mixture, just do your favorite omelette recipe and cook that with the eggplant.👍
I am familier with meshed eggplant. (Just needed musterd oil onion salt some chili for spicyness and coriander.) So yummy. But this recipe is interesting. I will try for sure

Some sisig even has mayonnaise on it. And other different parts of pork in it. Like ears, and smashed chicharon. It depends on the recipe BUT it is still good!

you can never get enough on filipino foods glad you trying out other recipes again more to come...tortang talong and tinolang manok is a healthy dish balance with veggies and protein you can slso dip those two dishes on fish sauce...actually the tinolang manok is good for people who are not feeling well...

Omg lol I grew up eating tortong talong, but my mom has never made it with cheese 😂 Also, the the halo halo - they sell halo halo mixes with different jellies and beans that would be SO GOOD with the sweet corn and corn flakes. As someone who's a Filipino non corn girlie I agree mais con yelo is good but definitely not for someone who doesn't really like corn.......I mean you'd love the milk and corn cream but the kernels would throw you off and the corn cream is too strong that I prefer to let the ice melt first

just don’t forget to also grill the skin side! it makes it easier to peel when it’s charred and tortang talong is always made without the skin, so you’ll still have to peel it and mash it down, or else it won’t get covered with the egg when you’re trying to fry it!

I got this as a YT suggestion. Thanks for trying our Filipino dishes. I missed cooking original tinola in a foreign land as chili leaves are rarely sold in the market. Our alternative for chili leaves is spinach. The irony is the country that I live in love and sell a lot of chili but not the leaves.
I think for the tortang talong, that was banana ketchup on top that they added - not chili 😊 Also for the sisig, since you skipped liver, I suggest adding some mayonnaise to make it a lil bit creamy!
About the eggplant you can garnished it with onion leaves or u can cooked the eggplant with onions (minced) if you want.. or if you want u can add some pork And in sisig some people add mayonaise and mix then garnished again with onion leaves .. and chili pepper.. In tinola its more delicious if u add garlic😊 ginger, onions and garlic.. then chicken and add water and chicken stock then if you want spicy add some chili peppers 😊 or chili leaves of u have then sayote Chili leaves if u have..

Hey Tina. use moringa leaves for tinola and that helps with milk production post-partum. That's one of the first things my mum fed me with after i gave birth and i didn't have trouble with my milk supply.
For me the secret for good tortang eggplant is burn the skin until its black so when you peel the skin it leaves a brown color on the meat of the eggplant. Your torta will be olalala 😘🤌 My mom usually put left over giniling na baboy(ground pork cooked in tomato sauce and bellpepper) to her torta
Good try. In the PI they usually do not put cheese but a little banana ketchup also taste good with it and rice. Also Sisig does not have a “g” in the middle, si-sig.
If you want a different approach for the chicken tinola but needs more work: 1) rub the raw chicken with salt then rinse it in running water. This is to remove the sliminess. 2) Prepare: chopped ginger, onion, garlic, and a lemon grass stalk. 3) Also prepare: sliced raw papaya and spinach leaves. But if you can find chili leaves, it gives better flavor. 4) In a pot, mix the raw chicken, ginger, garlic, onion, and lemon grass stalk. Add a dash of fish sauce and MSG. 5) Cover pot and put into medium heat. 6) Once it sizzles, you open the pot and do a stir fry. When the chick browns, you can add water for the soup. 7) Cover pot, and let it boil for 25 minutes or until chicken is tender. Add the raw green papaya or the chiyote. 8) Once the papaya or chiyote is tender, add the greens. Then season with salt or fish sauce, depending on the level of umami that you want. With this way, the results will be better. 👍👍👍
aside from the chicken liver, we also put mayo in our sisig and the raw egg is to be added while the sisig is sizzling hot so it gets cooked still. the first dish is called tortang talong and is often cooked with ground pork sauteed in garlic, onion and tomatoes placed on top of the eggplant. 😊
My mom makes the tortang talong into lil egg patties cause it’s easier for her to flip! You just cut up the eggplant after charring it! Kid friendly too!

She can put red or green or both bell peppers to add color to the dish and make it look more appetizing. It also adds flavor.

All of these are my favs. But tinola indeed has that memory of being sick and your mom making you some. That soup is like bog-standard Southeast-Asian style soup I guess, chayote, ginger, fish sauce and chicken, which is why it’s so familiar. Like we all grew up with a version.
So happy you're liking Filipino food, Filipino cuisine is savory that's why rice is a staple. Now, you have to try lumpia, sinigang, As for me, tortang talong is best in its simplest form, charred eggplant, egg, salt and pepper; dipped in soy sauce with calamansi, ofcourse best paired with rice. Yum! And it's not as hard to flip cause i just grab it by the stem, no spatula needed 😅

The first recipe reminded me of the Mexican dish called chiles rellenos but instead of eggplant we use poblano chiles stuffed with the cheese!! And we roast the chiles on a comal ( i think a griddle in english ) totally recommend u to try it!! Or any Mexican dish!! 😊
I thought the same thing when I saw the recipe. One of my favorite Mexican dishes.
Expect some similar dishes from the Philippines since were colonized by Spain such as Flan, and arroz dishes.
Filipino cuisine have a lot of Spanish influences because they were colonized by Spain if you notice most Filipino last names are also Spanish
There is a separate filipino dish similar to that one called dynamite. It's green chilli stuffed with cooked ground pork, onions and cheese then deep fried.

Tinola is the dish you want everytime it’s raining or cold outside, and when you’re sick.

It's called a choko in Australia and was a staple here in the time when people had outside toilets at the back of the garden. Choko vines typically grew next to the passion fruit vine and next to the outside toilet! 🤣

nice! don't be afraid to char the eggplant until it's black. you're gonna peel that anyways and it'll soften the eggplant to a custardy texture, you should lay the eggplant over a grill so you don't have to hold it up once it's getting softer. as for the egg mixture, just do your favorite omelette recipe and cook that with the eggplant.👍
I am familier with meshed eggplant. (Just needed musterd oil onion salt some chili for spicyness and coriander.) So yummy. But this recipe is interesting. I will try for sure

Some sisig even has mayonnaise on it. And other different parts of pork in it. Like ears, and smashed chicharon. It depends on the recipe BUT it is still good!

you can never get enough on filipino foods glad you trying out other recipes again more to come...tortang talong and tinolang manok is a healthy dish balance with veggies and protein you can slso dip those two dishes on fish sauce...actually the tinolang manok is good for people who are not feeling well...

So awesome that Tortang Talong (eggplant omelette) is getting this much attention. It’s one of those dishes every Filipino eats but takes for granted. It’s just such a simple dish, not very flashy, so many Filipinos probably wouldn’t think foreigners would like it. But it’s always been a favorite of mine
We call sayote chayote squash here in america. My neighbor grows it I always have tons this time of year from her.

As someone who's a Filipino non corn girlie I agree mais con yelo is good but definitely not for someone who doesn't really like corn.......I mean you'd love the milk and corn cream but the kernels would throw you off and the corn cream is too strong that I prefer to let the ice melt first

Personally I'd rather have vanilla ice cream on top instead of ube. I think the ube icecream would overpower the corn.

Easier eggplant. Cut in half lengthways, place skin up in a medium grill, 10 mins and it's done
just don’t forget to also grill the skin side! it makes it easier to peel when it’s charred and tortang talong is always made without the skin, so you’ll still have to peel it and mash it down, or else it won’t get covered with the egg when you’re trying to fry it!

I usually saute diced onions and minced garlic together first and let it cool then mix it into my eggs with a little fish sauce for more flavor in my eggs.

I am living that you made a part 2 for Filipino Recipe’s a tip for Chicken Tinola, Spinach is an alternative but we usually use Mallunggay Leaves (MORINGA LEAVES) and it is more nutritious and it is also good for pregnant mommies for producing milk (some filipino mommy’s says) but yeak im happy that i was able to watch this even tho its late❤️❤️ Maraming Salamat (tysm) Tina for trying our Filipino Recipes😍

I got this as a YT suggestion. Thanks for trying our Filipino dishes. I missed cooking original tinola in a foreign land as chili leaves are rarely sold in the market. Our alternative for chili leaves is spinach. The irony is the country that I live in love and sell a lot of chili but not the leaves.
I think for the tortang talong, that was banana ketchup on top that they added - not chili 😊
Also for the sisig, since you skipped liver, I suggest adding some mayonnaise to make it a lil bit creamy!

I didn't love Tortang Talong as a kid but this made me want to give it a chance again. Sisig with rice is so good too! ❤
About the eggplant you can garnished it with onion leaves or u can cooked the eggplant with onions (minced) if you want.. or if you want u can add some pork
And in sisig some people add mayonaise and mix then garnished again with onion leaves .. and chili pepper..
In tinola its more delicious if u add garlic😊 ginger, onions and garlic.. then chicken and add water and chicken stock then if you want spicy add some chili peppers 😊 or chili leaves of u have then sayote

Try the tinola with some rice and dip it in a sauce that contains patis or fish sauce in english calamansi and sili or red chili in english hahhaha love youuu guys!!! Hey Tina. use moringa leaves for tinola and that helps with milk production post-partum. That's one of the first things my mum fed me with after i gave birth and i didn't have trouble with my milk supply.

Tortang talong is my dad’s favorite. It’s also good when you add cooked ground meet with the beaten egg
For me the secret for good tortang eggplant is burn the skin until its black so when you peel the skin it leaves a brown color on the meat of the eggplant. Your torta will be olalala 😘🤌 My mom usually put left over giniling na baboy(ground pork cooked in tomato sauce and bellpepper) to her torta
Good try. In the PI they usually do not put cheese but a little banana ketchup also taste good with it and rice. Also Sisig does not have a “g” in the middle, si-sig.
11:36 Boiled, air fried and stir fried. You can be sure that sisig is completely cooked, nothing raw.
If you want a different approach for the chicken tinola but needs more work: 1) rub the raw chicken with salt then rinse it in running water. This is to remove the sliminess. 2) Prepare: chopped ginger, onion, garlic, and a lemon grass stalk. 3) Also prepare: sliced raw papaya and spinach leaves. But if you can find chili leaves, it gives better flavor. 4) In a pot, mix the raw chicken, ginger, garlic, onion, and lemon grass stalk. Add a dash of fish sauce and MSG. 5) Cover pot and put into medium heat. 6) Once it sizzles, you open the pot and do a stir fry. When the chick browns, you can add water for the soup. 7) Cover pot, and let it boil for 25 minutes or until chicken is tender. Add the raw green papaya or the chiyote. 8) Once the papaya or chiyote is tender, add the greens. Then season with salt or fish sauce, depending on the level of umami that you want.
With this way, the results will be better. 👍👍👍
aside from the chicken liver, we also put mayo in our sisig and the raw egg is to be added while the sisig is sizzling hot so it gets cooked still. the first dish is called tortang talong and is often cooked with ground pork sauteed in garlic, onion and tomatoes placed on top of the eggplant. 😊
Raw egg is a Manila thing.
Mayonnaise is an Ilocos thing.
My mom makes the tortang talong into lil egg patties cause it’s easier for her to flip! You just cut up the eggplant after charring it! Kid friendly too!
