- Beef Ribs - Today we are going to smoke up some beef ribs on our Char-griller Smokin Champ offset smoker. With some inspiration from Aaron Franklin's restaurant Franklin Barbecue and RUclipsrs like T-Roy Cooks, Aim em and Claim em Smokers, we will be doing a long cook on the smoker for some tasty ribs.

Beef Rib Seasoning
4 tbsps Course Black Pepper
4 tbsps Course Kosher Salt
2 tbsps Granulated Garlic Powder
2 tbsps Onion Powder
Mix all ingredients in a bowl thoroughly and place in a shaker with large holes on the cap.

I just got the Char Griller Texas Trio for Christmas. About to smoke some pork ribs on the smoker side, similar to what you got going on, to get my feet wet.
Question, when you add the charcoal/wood chungks after initial hour, do you have damper closed from smoke box to grill? Does it matter? Thanks. Gonna finish watching.

Aww man!!! It’s on! I just got my smoker! Thanks for this. What and how did you use the liner to help with keeping temp?
Awesome Delbert! The liner is sold on Amazon, its called Lava Lock. its about 13 to 14 bucks for a 15ft roll. You only need one to do the lid. For temp, I found about a half of chimney of charcoal keeps the smoker from 250 to 275. I add about every hour when the temps begin to drop. Wood splits, like 1 every 20 minutes or so.

Thanks brotha, I use chunks for convient smoke flavor. Only wood I can get here locally is Mesquite, which isn't bad. Occasionally I can come across Pecan from a friend when he trims his tree. But ya I stock up on different wood chunks, they work well with charcoal as the main heat source.
@@CookingwithKirby we're in the same boat with the wood. I can only find mesquite as well. As for chuck's (what I mostly use) I've been finding a variety. Lately I cant find the Pecan chucks. I'm going to be doing a Tri-Tip today on the offset w/chunks and see how it goes.

Awesome looking ribs bro. Certain parts of Texas are very similar to Eastern NC with their seasonings. We just basically use salt and pepper. But I like the extra flavor using garlic and onion powder.
Thank you Scott, I love the extra flavor also. I try to add as much ingredients as I can to a rub to make it right.
Some advice, use the minion method on your box. Put unlit first then put your lit on top. Makes for a great low and slow. Great video man. Keep cooking! Respect from Houston texas

In New England we pronounce it Whaa-stah-sheer or -whaw-sta-shi-yah, depending on which part of New England you're from. Either way we pronounce Worcester with 2 syllables so it's pretty cool to hear it with 3! Also the ribs look great! Cannot wait to try

Hey thank you Tony. The liner is from lavalock, it insulates the seam of the door pretty good. I've had it on there for 2 years now. No issues. amzn.to/3qq1FPI this is the one I used on it.

Just got my Chargrill Smoking Champ last weekend. It was mismarked at HD and I got it for $100! Excited to get it going. Did you season your smoker?
Hey Jeffrey, that is an awesome deal man. I got a similar deal on my blackstone, I guess Home depot makes some good mistakes lol. To season its really easy, just spray with some oil, I used canola oil. Burn a chimney of charcoal and add some chunks or wood. You just want to burn off any manufacture gunk that may be on there. After that you are ready to go. Happy cooking Jeffrey, its a good grill.

Great video Kirby. Came across your video because I bought the same offset smoker. Wanted to know what kind of seal was that around the edges. I noticed when I was seasoning mine smoke was escaping from the lid. BTW that spray bottle action was a nice touch. You might have stepped my game up for me. Looks like you are in Cali. if you are in LA area what butcher do you go too.
Hey Gibran, the lining I used on the barrel section is lava lock. I bought it on amazon for like 15 bucks.Its a high temp adhesive lining. It really helps from air flow leakage. I suggest picking up two. Opening and closing the smoker puts wear and tear on it. You can just replace when needed. I used less than a roll on it. Ya I live in Cali, im more southern by the Mexican border. Vons and Costco is where I get my meat. Vons for custom cuts. Thanks brotha, stay safe out there and have fun with the smoker.

Not to be pedantic but the word 'shire' means town, and the town of Worcester is locally pronounced as 'wooster' ( not woooooster, more like wouster, as in the word could) So Wooster sauce
Kirby, I saw Alton Brown use this same technique in wrapping but he used an oven and it seemed to turn out pretty good, but has to be better on an offset.
Its called the Texas Crutch, its breaks it down really easy.
You love that Worcestershire sauce lol. Check out Chaka marinade sauce if you haven't yet. It's very good on beef, Its similar to Worcestershire and its locally owned in northern cali which I believe your from? Ribs looks 🔥 bro!

I can get that same smoker brand new for around $160 in my area. How have you liked yours? Is it worth the money or should I save up for a better smoker?
How's it goin Joe, I have done 4 cooks on it and all have came out great. $160 is a good price for this smoker. The metal is solid, it doesn't feel too thin like most of these smokers in its price range. Installing the lava lock really made a difference on it, on this cook I didn't have the lava lock installed around the lid and barrel. Now the smoker doesn't leak, so air flow is going directly out of the smoke stack. You can find a roll of lava lock on amazon for like 15 bucks, you only need one for the lid and barrel.
I honestly see myself having this smoker for a long time, every thing I have cooked was done with no issues. It really depends on your budget and the quality of smoker you want. More expensive smokers have more insulation, features and conveniences. It really depends what you want, but this smoker can get you going at a low cost. Good luck on your purchase.

Thank you Joe, I learned how to do BBQ on my first stick burner like this grill back in the day. I enjoy the process and how you treat the cook while doing it. It is just a good time making good food with your works of labor. I wanted that low and slow feel back in my cooks, thats why I went with this smoker.
I have a issues keeping the temp up. I noticed you use chunks instead of splits plz help..
Hello Joseph, this smoker honestly doesn't need a lot of fuel to get temps of 250-300 degrees. I use a mix of charcoal and wood chunks. Charcoal being my heat and the chunks for the flavored smoke. I fill a charcoal chimney less than half way and about 4 wood chunks. Light up every and let the flame calm down after starting. I always start with everything wide open and once the aggressive burn has passed, I'll start playing with the vent to dial in my temp. I'll add fuel about every hour or when needed. Sometimes I dont always have to add fuel at each hour mark.

@@CookingwithKirby Awesome! I am looking to buy this smoker just worried if it can stand up to long cooks like brisket and retain the heat. Has it held up pretty well for you?
If you havent yet, this one has a smoke box set up differently. On the pro version the smoke box has a door. This one doesnt, so anything longer that 8 hours will start choking with the ash build up. A small brisket like 10lbs at 275, for 7 hours its good. Look at the pro to compare.
But quality of the smoker is really good for the price. But definitely do your research. Good luck

Gotcha brotha, I do some fishing to. My Father is a Bass fisherman, I do some fishing. I fish a lot in the Colorado river down in Arizona area. Good Catfish, Bass and Stripers in those waters. A lot of bait fish also.

I just released some baby back ribs, after this week. I am working on a modification to be able to cook more than 6 hours on it. 6 hours is the max it can cook stock. The bottom will get full of ash after 6 hours. This beef rib cook, if I wanted to cook more it would be difficult and clog the air flow.
