Try Out This Delicious Chinese Coconut and Peanut Mochi Recipe!

  • Welcome back to Mei Lian's Kitchen! Today we have a desert recipe for you! We will be making mochi! This is a Chinese version of mochi that's filled with a coconut and peanut filling.

    Ingredients
    1 lb (450g) glutinous rice flour
    1 can coconut milk (14 fl oz)
    1 ½ cup water
    1 tbsp sugar
    1 tbsp wheat starch
    2 ½ cups coconut threads (to roll mochi on)
    Filling
    3 tbsp coconut threads
    6 oz peanuts
    6 tbsp sugar
    Instructions
    Air Fried Peanuts: 400° F (204° C), flip after 2 minutes, let it cook for 1 minute on residual heat
    Pan Roasted Peanuts: cook on medium low heat for 15 minutes
    Mochi Skin Steaming: Steam Mochi skin for 25 minutes on high heat. Once the dough is ready check the inside to make sure it is the same color inside as it is outside!
