I'm wondering about putting the sauce & veggies & then placing a lid & leaving it on the stovetop as I don't use the oven in summer. I'll have to try that out as I always personalize recipes.

I don't count carbs. I eat whole carbs so I really don't worry about it.I can't recommend what amount of protein you may need. I can't give out medical advice. I can tell you that I'm eating around 100 grams per day.
TVP is textured vegetable protein - I purchase it on Amazon Anthony’s organic brand. It’s a meatless protein one can use to make veggie burgers, veggie crumble like is shown here. Needs to be hydrated with water for ten minutes or so and gives that meaty texture to dishes -season it as I assume it’s tasteless -sort of similar to soy curls. So it is dry in package and I have used to make veggie burgers and provides nice texture. Hope this helps
The protein obsession is annoying. So many whole food options besides TVP. Really bummed you're buying into the whole protein protein protein hype but thank you for the recipe.
Yes there are lots of whole food options, as well as TVP, tofu. tempeh, and soy curls, etc. It's great to have options so we can all do what is best for ourselves. You have no idea what my needs are just like I have no idea what are yours. What works for me may not work for you and vise versa. It's important for me to have an open mind and would hope that you would feel the same. I always encourage my followers to do what is best for them. I just share my experience. You are so welcome for the recipe.

You could heat it up on the stove and then put it on a oven safe pan to warm up ( if your frying pan isn't oven safe) Love this recipes

I would eat the whole thing but a cup of red lentils is almost 700 calories. Yikes!
