I just contacted Aeromexico today and they confirmed that Mexico City - (Tijuana) - Shanghai in late February will be operated with a 787 so I suppose it'll be the same on the way back.

That SP is a rare and fascinating bird. It could fly up to 46K feet at up to .9 Mach number. Like a 747 born without growth hormone. I believe NASA used (uses?) one...... Good thing AM chose the GE's. The Rolls Royce engines are sometimes shit.
