Mix the flour mix and sugar mix with the fruits by hand or you gonna get lumps of dry flour in the sweetbread. Those white splotches are flour mix clumped together that weren’t broken up properly. The sugar he used is not sufficient to make it sweet enough, you have to taste your batter before putting it to bake to make sure it’s sweet and not slightly sweet.
I slice of this sweet bread with my English tea would do me perfect Right now. In Jamaica we have similar called Easter bun but we don’t use coconut, I would rather the coconut in mine Thank you for sharing this amazing video ❤️

Nah, all those fruits added extra sweetness. That was enough sugar.
It really looks like clumps of flour....also 1tsp of yeast will keep it soft for days...and way too much fruits on top
