OK ...I have been watching you're lesson and listening to your guidance. To me, I need to hear how you do the modeling. Most of what I have seen on RUclips is labeled " How to" but what turns out to be a skewed lesson on background music and how great that person thinks he or she thinks about teaching. It doesn't work for me. You do spend the time and expend the effort to teach. Thank you. You've earned my respect and I will purchase your book. The other RUclipsrs should learn from you.
13:00 the plan view in this instance is called a split view, i.e., the right-hand side shows the top of the aircraft and the left-hand side shows the bottom of the aircraft. It's a common thing to see with Decal and Paint schemes with Plastic, Balsa and RC model kits, primarily aircraft.
When you ripping adges with V button, you can then hide selected adges with H button. And after that its easy to select adges that you need. Thanks for the tutorial, its really interesting.
Is there a way to scale Y zero and have it work like GG? If everything don't follow the fuselage edges it distorts the shape a bit. So I wind up with GG sliding every vertice one at a time until its close and then doing scale Y zero.
Should I drop my shirt to become a Blender master ?

Tip for the window. You can just make it when you constucting the body and later use the knife or cut tool to form the window. Hope this helps :)

1:08 I think changing the profile while beveling (shortcut is "P" while beveling) would result in a more accurate shape in this scenario.
