Hi Joel, Dennis here. I love how the Thai people add so many herbs and greens on the side. The folks here in Bali don’t eat fresh veggies and herbs like that. The duck and fish look yummy. I haven’t tried the ant eggs yet, but I am wiling to give them a go. I have been teaching a couple of families to grow their own garden.the love it, and during this lockdown they can eat for free. It is a shame here they got so addicted to the tourist money they don’t know what to do. I feel this is a good lesson for them all. How to live in Bali with Bali people having to live from Bali people. They are lost, they say there is no work. The social life is only focused on the ceremonies.

That is NOT an easy task, not when its basically changing the way of people's outlook, and how they are going to have to change their future (even in small ways, this is TOUGH!) great message, and good luck! Thai people in THIS part of Thailand are in the process of moving from living directly in contact with the land, to now having it slowly taken over by corporations and on smaller scale, loan sharks and loan scams and... its slowly happening everywhere. The food is still traditional, but where does it come from? How did it get here? I still wonder and worry about this often, but for your comments, Im sure its a similar story with Bali as is Phuket in the Thai South, not so much around here (but still, some things for sure!)
Thanks Joel, I am doing the best I can with the knowledge I have. This is a first for this fishing village. When I came they all said oh you can’t grow food here and I said why not. My pappy told me listen up boy, can’t never did anything. I guess it kinda stuck, so I used that attitude here and now people are growing food for the first time and it makes them so happy. I am also teaching the kids not to put plastic on the ground. They actually don’t see it as a problem. It because the elders don’t give a damn either. I tell them Jaga Bali bersih which means (keep Bali clean). The only solution is to make the corporations stop using petroleum and switch to some form of vegetable or hemp oil, so it’s biodegradable, and non polluting. As far as the world stays the same, this is a far off dream. Anyway thank you and Li, Mark and Ying for showing folks how great the world is through food. , peace and love, Dennis

Now without the tourist they are like chickens with their heads cut off, walking in circles crying the blues, I’m bankrupt. Basically they are lazy without any desire to change or come up with a way to make it better without tourism. I don’t like to say that this current situation is a good opportunity to learn, but it is. Only if everyone is ready.

I love me some Miang but I never had it with Pla too - usually fried tilapia. Ant eggs have a crazy texture! Like a balloon or jelly Bean. What a treat!!! What a beautiful garden restaurant, these were very healthy dishes, so many greens but they made them tasty with the dips and bright colors. Peam was great company, love to you all and safe travels ❤

Thiiiiiiis one hahah this one maybe only slightly :) If you ask me directly I will just say it’s delicious because it is, so herbal, this one not too bitter, not as strong as the one in the video you were talking about :-) but yes it is that same idea, just a gigantic amount of herbs and mushy jungle ingredients, you can just sense the health in every bite. 13:12 Those are Thong Laang leaves (ใบทองหลาง). The leaf was once always together with Cha Plu leaves in Miang Kham tray as couple. Today Thong Laang leaf became less to come by while Chaplu leaves today became more fibrous and harsh as well.

It took work, and it was worth it for sure. Saibaidee Joel, Li AND Peam! Man that spread looked so SAAP SAAP! Literally drooling watching everything. Reminds me of the spread my family would have when I was younger on the khantoke. I love me some Miang but I never had it with Pla too - usually fried tilapia. Ant eggs have a crazy texture! Like a balloon or jelly Bean. What a treat!!! I would definitely take on this food challenge. Haha.

SAAP nae nawn, this place is definitely one you would love, Im sure I can see that already, haha :). man, cool you always share Laos words with me man, so in the North of Thailand the traditional serving style would also be called Kantoke, but in Esaan I rarely hear that word!! Super cool man, so much of the language and culture and tradition for food especially, its all shared and mixed between these 3 areas in so many ways.... NEVER ending fascination man. And so thankful how TASTY the results of all this knowledge are in the end.

What a beautiful garden restaurant, these were very healthy dishes, so many greens but they made them tasty with the dips and bright colors. Peam was great company, love to you all and safe travels ❤

Thiiiiiiis one hahah this one maybe only slightly :) If you ask me directly I will just say it’s delicious because it is, so herbal, this one not too bitter, not as strong as the one in the video you were talking about :-) but yes it is that same idea, just a gigantic amount of herbs and mushy jungle ingredients, you can just sense the health in every bite.

13:12 Those are Thong Laang leaves (ใบทองหลาง). The leaf was once always together with Cha Plu leaves in Miang Kham tray as couple. Today Thong Laang leaf became less to come by while Chaplu leaves today became more fibrous and harsh as well.

The soup, ant eggs, The noodles and they continue to pile more and more onto your table. You guys definitely have a feast on your hands. Your friend is really cool to join you as you take on this meal. That mackrel looks delicious. Dude seriously I am just craving all that goodness right now. Peam and I have teamed up for quite a few meals like this but never one that was so massive all spread out on the table at one time, no way... I was nervous we wouldnt be able to finish for a minute there at the beginning haha (he ordered the extra kanom jeen just to try, I didnt know it would be a tower on its own!). Oh man. It took work, and it was worth it for sure.
Hope the day is treating you well man, I gotta tell you I just may have had the best single plate of Laap in my 12 year career in Thailland... you know thats sayin something!!!! So stay tuned for that video in a few weeks time, holy cow
