Grandma's Cookbook Addendum- Hummingbird Loaf Cake with Cream Cheese Frosting.

- Anniversary edition.
1 1/2 Cups flour
1 Tsp Baking Soda
1/4 Tsp Salt
1 Cup Sugar
1.2 Tsp Cinnamon
Wisk to combine, then add:
3/4 Cup Oil (I used vegetable)
2 Beaten Eggs
Combine, then add:
1/2 Tsp Vanilla Extract
1/2 Cup undrained Pineapple
2 Mashed ripe Bananas
1/2 Cup Chopped Pecans
1/4 Cup Raisins
Bake at 350*F for 45mins to 1 hour, check at 45 mins and if top is browned, cover with foil to prevent burning. Allow to cool in pan for 20 minutes, then remove to cool on wire rack.
Frosting:
1/2 Cup Softened Butter
8 oz. Softened Cream Cheese
1 Cup Powdered Sugar
1 Tsp Vanilla Extract
1/2 Cup Chopped Pecans
Combine butter and cream cheese, add vanilla extract, combine, then combine powdered sugar, fold in pecans.

This looks really yummy. I'm going to have to give this a try. Yes I've seem coconut in a few recipes I've looked at.
