大家好,欢迎来到冬厨坊! Welcome to Asian D’lite Kitchen! Today I am going to share with you on how to cut a whole chicken for the best presentation as you have seen in Chinese restaurants. A Chinese knife is highly recommended as it is bigger and designed to cut bones. If you don’t have one yet we will try to make it work.
Step by step instruction:
Start with sharpen our knife. A sharp knife is better to prevent injury, you can use the bottom of a plate like I did or anything you use in the house.
1) Chop the neck off, and separate the head from the neck by cutting underneath the head over here, that way we can place the head on the plate.
2) Cut off the bottom part. Put the whole chicken upside down by placing the chest on the cutting board.
3) Avoid cutting through the spine, instead cut the side of the spine. Hold the chicken on the other side of the spine to stable the chicken. Carefully cut through the bottom, if you are having a hard time, use a hammer to help. This is the trick if you don’t have a Chinese knife.
**Please remember to always be cautious.
4) Cut the chicken in half, put one half aside. In the middle of the chest, there is a soft bone, cut it out.
5) Chop out the wings by the joint between the wing and the body. Trim some of the fat from the chicken.
6) Chop out the drumstick, slice off the thigh, cut into two pieces.
7) For the chest bone piece, gently separate the white meat from the chest bone. Cut it into bite-size pieces. Put on the side of the serving plate.
8) Cut the back bone piece into bite-size as well. Place it in the center of the serving plate.
9) Cut off the drumette from the flat and tip, cut into two pieces.
10) Chop the drumstick into bite-size. And put on top of the chest pieces.
11) Cut the tight to bite-size.
12) Try to arrange the chicken pieces nicely. Do the same for the other side of the chicken.
*Remember there was a chest piece with a soft bone?
13) Tear the meat from the bone, cut it in half, and put a few slices to the side. make a wing-like shape. Place them on the upper side of the plate.
