Keto Pancakes Follow-up: Recipe Scaling, Bulk Mix, and Waffles

  • In this video, I follow up on some questions and comments I got from my "Keto Pancake" video, linked below. I answer questions on reheating, making in bulk, waffle-izing the recipe, and whether it can create a decent McGriddle bun.
    IMPORTANT NOTE: in the video, when I did a half batch, I miscalculated the volume measurements as 1/2 cup plus 1 TB of dry mix. It should be 3/4 cup plus 2 TB dry mix. I re-ran my waffle experiment using a Dash No Mess and the yield was 3 1/2 waffles. I stand by my opinion that this recipe (even when made correctly) is too cake-like for waffles.

    Full batch (6-7 pancakes): 1 3/4 cups dry mix or 166g

      When you mentioned that the top of the pancake came out not as done as the bottom from the griddle, is it possible the top element may be faulty, and not heating as well as the bottom?

      Do you have a video. Or know of a video that has a really good waffle recipe. Something that I can use with the dash mini but not a full fledged waffle maker? Does that make sense?

      The easiest is just a base chaffle of egg and mozzarella with a scoop of flavored protein powder (I find the Quest cinnamon crunch to be great for waffles).

      Hi Steve, could you consider looking into making a keto replacement for maple syrup? A popular brand of maple essence is 50% maple syrup and alcohol, and diabetics are asserting that it raises their blood sugar.
      I'm sure your viewers would appreciate your experimentation? ☺

    I often flip things over using a spatula on the Mini Dash griddle and cook the other side with the lid open in order to brown the other side. Thanks for the video.

    I agree about the Dash Mini Griddle not cooking food as well on the top. To work around this I usually flip things over half way through the cook (if whatever I’m cooking is set enough to be turned). Works very well.

      I find that if there's enough rise in whatever you're griddling to make lid lift up, it turns out pretty good. But for the most part, I only use it for my McGriddle buns.

    Hello! For waffles, I separate the eggs and beat the whites. Mix all ingredients and fold the whites in last. That creates a light fluffy waffle with a nice crispy outside! Love your videos and recipes!

    When I make a bunch of pancakes or waffles & have leftovers I will reheat them in the toaster so they crisp up. 😉

      They freeze and reheat well, so long as they don’t frost.

    I flip my griddle Dash upside down half way through the cooking time; works well instead of opening it and trying to flip the pancake.

    Great Video! I used to premix and double batch before my Keto baking. Now during Keto I have 2-3-4 separate bowls with ziplock bag in them and measure dry ing. into each bag to make sure recipe will turn out Oh label bag and refrigerate. Yr sifting makes sense tho. Thx!!

    I find many keto recipes very temperamental. Seldom turned out the same twice. I guess I am not a good cook or patient for that matter. 😅 Hats off to you, Mr. Steve 😂

    I made your pancakes for dinner for my little family! They were delicious 😋 We loved them! This will be a staple recipe in my kitchen for sure! My 15 year old devoured them and said they taste like regular pancakes lol 😂 I made a double batch and ended up with two extra pancakes then what the recipe said and they weren’t wimpy in size at all. By far the best keto pancake recipe! Great job!

    In use my Dash mini griddle to heat up keto burritos I have prepared in advance. I spread both sides with butter for heating. Works great.

    Funny, this morning I tried the recipe with waffles as well and thought the same thing. Definitely need to tinker a bit more to get that crispness. Thanks for the dry bulk info. That will really save some time in the future.

    I believe waffle recipes generally have more oil than pancakes. Try doubling the oil and see if you like the texture and crispness.

      Thanks for the tip. Per Alton Brown, not only should I add more fat, but also more "sugar" to aid in the caramelization. The thing is, I haven't found a sweetener that caramelizes. I guess I should try firing a brulee torch at some BochaSweet to see what happens.

      For sous vide steaks and for fire-roasting chile peppers, I have a MMAP blowtorch with a searing attachment. I've only set of the smoke detector once. 😄

      I bet if you added a little more oil to the batter, they'd crisp up a bit more in the waffle maker.

    i have found that if a waffle/ chaffle batter leaves you with a soft end product, 90% of the time a trip through the toaster will give you the crunch you're looking for.

      So I just tried toasting one of these and it did not crisp up. According to Alton Brown, waffle batter requires more oil than pancake batter so that it can "fry" on the waffle iron. Next time I'll look at upping the oil.

    I love your videos. I hope you don't mind if I mention that half of 1 and 3/4 is 7/8, which would make your measurement for the flour for a half recipe, 1 cup minus 2 Tablespoons.

    Adding some (?) arrowroot flour to waffle mix may give a crisper texture. (Works on regular wheat flour waffles.)

    I was disappointed in my Dash griddle. My pancakes were not done in the middle. Just like yours was done well on the bottom but not on top. However, it makes great omlets.

    I am glad you got the family eating keto pancakes. Dont let them put full sugar syrup on!!! I think Courtney liked the Choc Zero maple syrup.

      @Robyn Benson I guess that depends on how much carbs you allow in your day and whether you are willing to consume sucrose, glucose and fructose. There are already 6 net carbs in the recipe so that would take it to 10 which is too much for me. But you may be able to do it depending on your macros.

    I have a different waffle maker, but I found it didn't cook completely. I learned to make 2 small waffles ( chaffles ) by not filling the iron completely. About 3/4 full .and I flipped them over . That way they were crispy and appetising. K

    Great to know on the bulk recipe making. I think if I were to go to the work of making the dry ingredients in bulk, I would probably just go that extra step to make them up completely and freeze.

      I think if you have a large skillet (electric or stove top), that's not a bad idea. I haven't done a side by side taste comparison between freshly griddled and frozen/microwaved, but there was nothing about the reheated pancakes that struck me as being "off".

      That was what I was wondering, if you could make the entire mix with both dry and wet ingredients, and then portion them out into small batches for how many you want to make, and then freeze the full mix, assuming that would work.

    If people really want to use the Dash Mini Grill because they don't want to turn on the stove and dirty a pan, maybe flip the pancake over and cook for a bit more? To get crispness on the waffle, maybe use some oil in the waffle maker?

    Thanks for your service to the keto community, Steve! Here's a question for anyone and everyone in this viewer community:
    I was about to switch from Keto Stix to a Fora 6 Connect blood monitor. Urine strips supposedly lose their analytic capability after the body has been in ketosis for a while, because the body becomes better adapted and not as many ketones end up in the urine.
    In the process of ordering a blood monitor, I ran across a breath monitor. It measures the acetone in your breath as an indicator of ketosis. Would breath-acetone measuring also lose it's effectiveness as your body becomes more and more efficient in using ketones? Does anyone actually measure this way or have other words or wisdom for me?

      We may have a tiny pantry but with a little organizing I have a shelf for keto. Since I am short I have a lower shelf and hubby has upper shelves. I keep all my keto spices, dry, and canned goods all in one spot, so easy to cook now. He also doesn't keep moving keto all over the place. Marshall's, etc have containers pretty cheap.

    Would be really cool if you could come up with a nice crispy waffle mix that we can use in the Dash. I love having mini waffles for Grab-n-Go.

      It would be cool, but the challenge is the egg. One egg typically yields 3 pancakes in the batters I've worked on so far. I do have powdered egg whites and powder yolks and I know that powdered sour cream exists. I think I could probably create a dry mix that only required a person to add water and oil to and that could be scaled to any number of pancakes or waffles. The problem is that it would involve buying a number of additional ingredients for most folks...

      Serious Keto I actually am ok with not using a pre-done mix ready to go. I’d love a good crispy Waffle recipe though, that freezes well and crisps up when put in the toaster to re-heat.

      I think the issue is that waffles require more oil in the batter so that they “fry” in the waffle iron.

    Have you tried the Dash Sous Vide? I thought it would make a nice sized bread used as a griddle without the inserts. I only tried it once, didn't have great results.

      Okay, it's not a Sous Vide machine -- it's an egg bite maker (that might make something similar to the Starbucks sous vide egg bites). That makes more sense. Anyhow, I guess then I can answer your original question accurately -- I do not have one of these, but they look kind of interesting.

    I’m more of a waffle guy and also have had trouble with using keto pancake recipes for waffle recipes. My mistakes usually go to the dog, she loves my mess ups. My go to waffle (single large round “Belgium” waffle iron for me) is “Resolution eats” www.resolutioneats.com/blog/worlds-best-waffle/ ...lots of ads etc on the site, so kinda of a pain to visit (but give the devil his due) the waffles are really great...I never tell anyone they are keto.

      Per Alton Brown, waffle batter should have more oil and sugar than pancake batter. The oil helps it “fry” and get crisp; the sugar causes caramelization. My next trial run, I’ll up the oil and see how that works.

    I wanted to like these so much and I just cant. 😟 The pancakes came out raw no batter how long I cooked them. Bummer. I hope others had better success.

      I wish I could see how you did them so that maybe I could diagnose the problem. If you read the comments on the original video, you'll see that with maybe one or two exceptions, they've turned out great for people. Sorry they didn't turn out for you.

      Serious Keto I know!! Im so bummed. Ive seen both videos and thats why I finally tried them as I haven’t had keto pancakes from scratch for some time! The batter was super thick too which I though was strange. I might try again if I can salvage these by maybe baking them in foil or something. They definitely don’t need more color.

      Do you have a way of checking the temp on your griddle (i.e. IR gun)? I ask because mine runs WAY hotter than what it's set to.

      If you do it with this recipe I’d recommend doubling the oil. That’s something I read from Alton Brown.
