Ramen seemed so intimidating to me, even though I’ve been cooking for almost 50 years. Also, I usually don’t have all the ingredients, but watching several of Yeung’s videos I’ve realized that things can be substituted, what matters is keeping the overall profiles of flavors and textures, and most importantly, that it’s not a big deal. I made this today -with some subs and add ons- and it was absolutely delicious. I’m so sincerely thankful for this channel; it has changed the way I approach cooking new things.

Looks amazing! For one or maybe even two servings, may I suggest air frying the vegetables instead of baking them. I often just throw lightly-oiled fresh or even frozen broccoli florets in my air fryer, and a few minutes later they’re lightly browned on the outside, perfect in texture, and delicious. Works for tofu and mushrooms too. I haven’t used my oven in months 😊

Not that I don't love going through all the books to find something, it would certainly be helpful. I would be able to note the recipe at the time of the episode if I knew it was not in one of your cookbooks. Your dishes are truly delicious. I don't change a thing.
