Forget the Eggs! Easy Vegan Crepe Recipe

    These crepes are unbelievably easy and fantastic! Aquafaba or chickpea water is the key! This recipe with bananas is a non- alcoholic version of bananas foster. These can be used for both sweet or savory dishes. Let me know what way you’d like to eat these…
    Makes approximately 12 crepes
    Ingredients:
    1 cup soy milk (can use other vegan milks)
    2 tbsp water
    ½ cup aquafaba (or chickpea water)
    1 ½ cup flour
    ¾ tsp salt
    2 tbsp melted vegan butter
    Instructions:
    In a bowl, add flour and salt and mix together well.
    Add liquids (soy milk, water and aquafaba) slowly pouring and then whisk all ingredients together until smooth.
    Ladle a ¼ cup at a time into a hot non-stick pan, thinning out the batter as you make a circle. Flip the crepe when the edges lift or look a little brown. Allow the other side to cook, and place on a dish or tray.(Note: crepes may seem crisp initially but will soften as they sit.) Continue to make more crepes. Set aside.
    Important note: As you are pouring your crepes, you will notice the batter is a little thicker as you get to the last third of the batter. Add a little bit of water at a time to adjust the batter to the correct thickness. Continue to ladle the batter into your pan and cook them.
    Serve with a filling of your choice!
    For Bananas Foster (no alcohol) filling:
    2 Tbsp vegan butter
    2-3 sliced bananas
    2-3 Tbsp brown sugar
    ½ orange, juiced
    Vegan chocolate sauce or melted chocolate chips
    In a pan on medium heat, melt vegan butter. Place bananas in the pan. Move the bananas around gently while allowing them to carmelize.
    Fill crepes with banana filling, fold crepe over and drizzle chocolate sauce on top. You can also serve with vegan whip cream or ice cream.
