This chocolate cake is so simple and uses ingredients most of us already have on hand. Hope you enjoy this childhood favourite of mine!
Ingredients:
3 cups all purpose flour
2 cups sugar
⅔ cups cocoa powder
2 tsp baking soda
1 tsp salt
¾ cup vegetable oil (canola, sunflower or safflower oil)
2 tsp vinegar
2 tsp vanilla
2 cups cold water
Instructions:
Heat oven to 350°F.
Mix together the dry ingredients; flour, sugar, baking soda and salt until well combined.
Make 3 wells in the dry mix. Put oil in one, vinegar in another & vanilla in the last. Pour cold water over the ingredients and mix well.
In a greased 9” x 13” baking pan, pour the batter in.
Bake 40-45 min. Cake tester should come out clean.
Suggestion: This cake can be topped with a vegan icing. You could also serve the cake with vegan ice cream.
Mike’s suggestion: Add ¾ - 1 cup of mini vegan chocolate chips. :)

Looks great--love this is plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and the lead and choline in eggs. Thanks for sharing

My Mom's recipe from 60 years ago was called No Egg Crazy Cake and had slightly different ratios but basically the same. It is a moist, heavy cake that people really enjoy and it seems men appreciate it over the lighter cakes. We used to love to pour the vinegar onto the soda and watch it foam. 😋 Here's Mom's.
