October 1 is China's National Day, a 7-day holiday that can be desperate with people everywhere, crowded and noisy. Hurry up and find a small city to hide in and never go to any tourist attractions! Counting heads in a crowd is not fun!
Normal people in China don't eat the insects. It's a tourist trap thing. Also, there are many halal restaurants in China. Look for 清真 on the restaurant banner/sign, typically written in green, as an indicator for halal food.
You are right, never visit countries like China, Japan, Korea during summer. I visited Japan once in summer and I swear that would be my first and last summer trip. My friend also went this year during their summer and she almost fainted from the heat.

I once spent 3 months in Shanghai. The summer is definitely HOT and by the end of the 3months it was November. The cold was nothing I had ever experienced before - "BONE CHILLING COLD" is the only way I can describe it.. and I'm originally from Scotland.
I recommend Yunnan, Xinjiang, 2 provinces for their many picturesque diverse landscapes (esp in spring and autumn) and diverse ethnicities. Inner Mongolia for rolling grasslands, Yining for fields of lavender, and Hunan for Zhangjiajie (aka avatar mountain), just to name a few. Tibet also has many great landscapes but travelling to it requires a separate permit and a local guide, usually Tibetan locals. If time permits, retrace the ancient silk route from Xi'an (or starting Beijing) all the way to Kashgar. Karakoram Highway on China side to Pakistan also has great views along the way.
There are a lot of halal restaurants in every city in China. Even the smallest towns in rural areas. The restaurant itself is usually in green and has two Chinese characters that say halal food.

I recommend some interesting China cities: Shanghai, Beijing, Guangzhou, Shenzhen, Hangzhou, Chengdu, Chongqing, Xi 'an, Suzhou, Qingdao ... These cities are all worth exploring! There are also Dali Ancient City and Old Town of Lijiang in Yunnan Province, China. You can see the beautiful ancient villages in China in these two places, which are absolutely different!
