I've been watching your channel for a while now. I live in Denver with a huge Mexican population and restaurants galore. We have gringo Mexican food that takes cooking to another level but is furthers away from authentic. Every single "authentic" Mexican restaurant uses pre-made red and green chili sauce. The food all tastes the same from every corner of the city so I normally cook what I want but good recipe. I'll be trying it soon..

What region of Mexico are these from? Our sauce is nearly identical, however, we don't add the chicken on the side, for us it goes inside the enchilada. My sister makes them like you. They look delicious!

Yes...Enchiladas! I haven't had this particular recipe but it looks delicious. I have had a salsa similar to the one you prepared. I really like to toast the ingredients on the comal before blending into a chucky texture...
I followed these directions, perfectly, but my tortillas all broke the moment they hit the pan...I ended up making quesadillas and poured the sauce over them. It was delicious! 😋
Sorry to hear that! I bet it was the type of tortillas, it gets a little bit tricky with store bough tortillas (really depends on the brand). I would say keep the tortillas in the fridge until ready to use so they keep cold and when you add to the pan, give it a few seconds, turn before it softens to much then resume with the rest of the steps. Is there a Mexican store close to your house? Or for better tortillas you could check out my Corn homemade tortillas tutorial.

You can fill them with chicken or beef as well. I grew up having enchiladas this way. We only stuff them with onion and cheese but this is how they are served where I grew up. There are so many version of enchiladas with small variations depending on the region and what's available. Thank you for showing interest 😊

An idea to try: Obtain New Mexico (Mesilla or Hatch) add this red Chile to your Enchilada sauce same as the guajillo. It will take it to another flavor level...if you don’t like it too “picoso” hot look for a medium or mild version. Try it. We also mix dry Pasilla as well. Then with a bottle of full bodied Spanish wine Garnacha Tempranillo blend from Toro or Ribera del Duero regions or an full bodied Californian Zinfandel or Sarah or well brewed beer like Modelo dark or Bohemia! Drink water not Soft drinks they kill the flavors.
I love your show and your passion for cooking! Your recipes are on point with me. Just one minor suggestion: listen to your voice playback on any of your episodes. Toward the end of every sentence you’re pitch drops so low that it sounds like you’re gasping to get that last word out. Every once in a while, raise the pitch of your voice at the end of a sentence and it will not only improve your voice quality, but it will also add more life and variety to your presentation. Keep it up!

Hi there, you should be fine as long as you don't let them burn while toasting. You could dry them with a clean kitchen paper towel.

might be good if the chicken was shredded and added to the inside of the enchiladas too!
You could definitely do that. We grew up eating them with the chicken on the side like in this video and I personally love them like this.
