-This recipe serves 1 dozen enchiladas
Ingredients
12 corn tortillas
8 Guajillo chiles
2 1/4 cups chicken broth
2 cups shredded chicken
1/4 onion
2 to 3 garlic cloves
1/2 tsp Mexican Oregano
1 tsp salt (Himalayan) or 1/2 Tbsp chicken bouillon
10 Oz. Queso Fresco
1 tbsp lard or oil (for enchilada sauce)
Oil for frying
Optional- Crema fresca Mexicana
Instant pot chicken
Pressure cook 1 hr
1 small chicken
1 whole garlic
1/2 Tbsp Himalayan salt (adjust to your salt)

We made this for dinner tonight. It was excellent. Even more amazing was my daughter with Aspergers and food issues tried the sauce with tortillas, didn't spit it out, and said it wasn't bad and she would probably eat it if we had it again. She lives on smooth peanut butter so that's a really big deal. Thanks so much steph.

Thanks so much! Tomorrow I’m gonna make some for a special dinner to cheer up my 15 year old son. My mom makes delicious enchiladas for us when we visit. She’s in California and my son and I are in Arizona. We’ve been feeling the quarantine blues especially because we can’t visit family in California yet. We got over the Covid and it was so rough for us. My brother lives in Las Cruces NM next to a farmer that has the best sun dried red chile. As soon as I get the burlap bag he's promised me, I will be making some enchiladas.
I usually only add oregano to my red chile when I make posole...but after this video I'm looking forward to trying it.

These are my favorite kind of enchiladas! I like them with queso fresco and onion. I make some chorizo, potato, and carrots to put on top with a little shredded lettuce. Sooo good.

hey there Stephanie and Cloud - I have been watching for a bit, I recently subscribed and tonight I tried to make cheese enchiladas with Mexican rice and beans. This is the FIRST time my store bought tortillas were able to be rolled! I love the scratch Enchilada Sauce. It came out GREAT even though I had to make a substitution. I love that your videos feel like we are all in the kitchen together. This is how my sister's and I cook together as well.... sans the camera! It just feels like we are visiting and making dinner! Keep it up, ladies! Truly enjoyable and educational!! I haven't been brave enough to try home made tortilla's yet. Yes. I myself have been wanting to watch but unfortunately my dad just passed and my family and I, have taken it harder than expected. I am making an effort to be more present and make memories with my sisters, nieces, nephews and now the gran nieces and grand nephews.
