Enchiladas Suizas are creamy, cheesy, saucy, and delicious! They are baked to perfection and covered with a nice layer of Oaxaca cheese, or any melting cheese you may have available. Whether you make them for the melted cheese, or because you love the green tomatillo sauce; there is no going wrong with this recipe. Each ingredient in this baked enchiladas plays an important roll by contributing to the flavor you experience in every bite. This is the only chicken enchiladas recipe you will ever need. It tastes amazing!

Enchiladas Suizas Recipe
11x16 baking dish
Makes 15 enchiladas
To cook the chicken
1.5 lbs of chicken breast
12 cups of water
Small bunch of cilantro
1/4 ea medium white onion
2 sprigs mint or hierba buena leafs
3 ea garlic cloves
1 roma tomato
Salt to taste

Salsa suiza
2 lbs tomatillos
1/2 medium white onion
4 garlic cloves
3 serrano chiles
8 cups of water
1/2 bunch of cilantro
1/4 cup of chicken broth or water we boiled tomatillos in
1 cup Mexican crema
1 tsp kosher salt
* Optional: Reserve 2 cups of the salsa for plate up. If needed, reheat in a sauce pan on a stove top. Make sure it reheats on a low a simmer and stir continuously so it doesn't break.
For the chicken
4 cups shredded chicken
1 tsp kosher salt to season shredded chicken
Additional items
1 lb 2oz Oaxaca cheese, grated
1/2 cup mexican crema, to top the enchiladas
15 ea corn tortillas
Oil for frying tortillas

Rosanna, I have to send a note of thanks for this recipe. We moved to France from Arizona two years ago and Mexican food is something I have been sorely missing. Tomatillos and most chilis are not found in any of our local stores and there are no Mexican specialty stores in our region. However, I recently found a Mexican specialty shop in Toulouse that has fresh tomatillos and fresh chilis grown here in France. I was so excited I ordered about €50 of produce for delivery. One of the first things we made was your Enchiladas Suizas recipe ... good gravy, it was amazing! Thank you so much for sharing your beloved Mexican cuisine. I now feel like I can have an authentic taste of Mexico here in France.

I followed the recipe exactly. I thought the tomatillo sauce was really good. But all she placed inside the enchilada was the chicken. I served it to my daughter and son-in-law, and my daughter was saying how she wish there was something more in the enchilada besides just the chicken. Like maybe some cheese and onions. If I make this again, I will definitely add more to the filling than just chicken, it was very dry. I think she is adorable though!
Certainly, make it your own. But I will say the meat only filling is kind of what an enchilada is. You could add more but then its stepping out of enchilada territory and kind of becoming a smothered burrito. Just saying

I could't find tomatillos in turkey so i use green tomatos (raw tomatos) 🙈 it was a bit sour but i think using cream and a pinch of sugar balanced it. Using cream in sauce was a great idea gracias mucho mucho 😉
I myself have been thinking about a good substitution for tomatillos since I get this question a lot. Green tomatoes was my first option but I have not tried it. Thanks for sharing. I will try as soon as I get a chance to see if its close in flavor.

I know it’s not traditional I would have topped it with mushrooms, as a son of a chef my Pop always told us recipes are a foundation to add to or detract to make it your own way, I also agree serrano tho hotter offer more flavor than jalapeños, I also favor a poblano-Serrano combo for more flavor and spicy…

Hello there, to add as additional sauce when plated.
Would this be something I could make ahead and freeze? Or will the tortillas not hold up?
You can line up the tortillas and freeze but I would not pour the salsa over them until you are ready to bake.
