Also I seem to have a mental block around deep frying anything, can I use the oven or air fryer instead ? Would this turn out the same result?

Tip: you can filter the oil really well with a funnel and a coffee filter, just be patient and it will come out without particles, that is if you do not want to keep it out all the time. Doing this would not extend its life span, just keep it "clean" after frying anything messy.
Is there a specific red chili that you use? Here in the USA, there are so many varieties of chili, especially from the southwest. I have an Indian market here in Richmond, Virginia. I could probably find what you use. Thanks.
Anytime one uses oil or a lot of liquid, I think it is safer to cook on the back burner, as there is less chance of disastrous accidents. It is safer for the cook and carelessly tilting over. The cauliflower recipe is nouvelle. I have started drinking home made masala chai, thanks to you!
