  • Recipe:
    5 lbs salmon belly.
    1/4 cup sea salt.
    1/2 cup ground fresh Galangal root.
    One cup ground toasted rice.
    Combine ingredients together keep in a tight seal lid jar at room temperature for two weeks or more for sour flavor.
    Keep in refrigerator or freezer after fermented.
