  • Maybe you have a sweet tooth like I do.
Here is a healthier cake that could be made for any celebration or holiday.
    Basic Recipe:
1 box yellow cake mix by Swerve
(the best box mix for the occasional cake) ***My opinion, of course.
Please read the box label for the nutritional facts containing almond flour, swerve sugar, coconut flour, tapioca starch, baking soda, sea salt, and cream of tartar.
    3 eggs
    1/3 cup of coconut oil
1/2 cup of Chocolate Mousse Coconut Cult YOGURT instead of water.
Dark chocolate chips sprinkled on the top.
Bake at 325 ( not 350) degrees till done.
I'm not recommending higher temperatures any longer.
    Heart to heart:
    Change
    Change
    Change
    Does life ever stop changing?
Yesterday, I stood on an exact section of land looking at a large photograh where 80 years prior stood a group of dressed- up west coast visitors.
The sea coast had the same land formations. The waves were crashing in.
    But times have changed, absolutely.
Everyone of those travelers are deceased, I assume.
    But nature carried on.
    And society carries on.
We dined at an open- air restaurant where I ate salty raw tuna with salad.
It felt spectacular with the salty sea air blowing my textured hair into a frizzy mat on my head. I was carefree and alive!
Later, we sat with thousands of Californians who were dancing and connecting in small parties while a band played Bob Marlay songs: which I knew none!!
Remember, no two days are identical.
    Life is not "Groundhog's Day.""
    We all age.
    We all change.
We all manage one life on earth.
    We all have accidents.
    We all have victories.
We all cut our nails and manage brown spots on our skin.
    My Simplistic Summer Summary:
I love to be alive. Thank you, Dad and Mom.
    Thank you, God.
I'm headed toward heaven for a different existence.
But until then, may God bless you and keep you, may His face shine upon you, and give you abundant life.
    Love with frizzy holiday hair,
    Karlene Jo
