Chicken Wings on the griddle (Appetizers on the flat top grill)

- These Chicken Wings on the griddle are great flat top grill appetizers to make for football season or family get-togethers. Add a little Liquid Smoke to your buffalo sauce to replicate the taste of smoked chicken wings without having to start your kettle grill or smoker.
Start by prepping your chicken wings and take the extra time to salt them and let them dry out in the refrigerator for a few hours before cooking… This will help to draw out the moisture and make your buffalo wings less soggy.
Then, wipe off the excess salt and moisture with a paper towel. I seasoned one side of the wings with pepper and garlic powder, then I put the wings skin side down on my pre-heated Camp Chef griddle. This helps to render out some of the fat. Cook about 5 minutes on the skin side, then flip them over to cook on the other side.
Next, I divided the wings so that the drumsticks were on one side of the flat top grill and the flats were on the other side… That’s because the drumsticks are larger and take longer to cook.
Cook the wings until the internal temp is 165 degrees. Be sure to probe multiple wings. You can also use a dome to help speed up the cooking time.
Then take the wings off the grill and toss them in a large bowl with buffalo sauce and a little bit of Liquid Smoke. Then, put them back on the grill to continue cooking. Allow the buffalo sauce to caramelize a bit on the wings which will help to create a crust.
Top with more buffalo sauce if needed.

A little tip, curtesy of America’s Test Kitchen, mix equal parts of baking powder with the salt, let sit over night in fridge. Makes a huge difference in drying out skin to make crispy. Great Vid

I make my own wing sauce, too. In addition to the hot sauce and liquid smoke I add butter, minced garlic and worcestershire sauce to my wing sauce.

I've never really use Liquid Smoke because I'm surrounded by tons of different types of trees, but I like how you tried it and told us what it was all about.The only question I have is why isn't Virginia on your shirt? I love the idea.....imo i would reverse that idea...finnish on the smoker to help dry out the wings from the grease....but heck any way will work....

I had no idea, you could do wings on it, they look fantastic. I use liquid smoke in my brine when I smoke salmon, I have a pellet grill, that does not produce a lot of smoke, the liquid smoke makes right up for it, I buy mesquite. I also use it when I smoke pork shoulder on the pellet grill, love the videos.

Looks great. do they have crispy skin? that is my concern when trying these. just got a a 22" for christmas. am a die hard Weber guy...wife cannot stand non crispy wings with rubbery skin.
Definitely not crispy. But not rubbery either. Weber all the way. The trick on these is to try to render as much fat out as possible. If u have a Weber and like crispy or smoked wings there really is no comparison. But but but they are good this way.
Now I want some wings. Might have to do some frozen wings on the Weber using the vortex.
Are you a fan of the vortex. I have one and not a fan at all. I just sometimes use my baskets that cam with it, or just push the coals to one side.

New sub here. Love the channel! I recently tried wings on my griddle and it was a disaster. I started with the temp very low (as suggested on a different channel) with the idea that the fat in the wings would render as the heat built up. They stuck to my griddle so bad I had to give up and throw them in my smoker to finish. My thought was the low temperature caused my problems. Any thoughts? I see in this video that you started hotter and dropped the temp after the wings browned up a bit. Any tips or suggestions would be greatly appreciated. FYI, I think my griddle is seasoned properly. I have never had a sticking problem before this cook. Keep up the good work.
a few things..
1...dont season before..
2....i start higher for that exact reason...browning on the chicken is flavor....
3....the chicken will always leave some residue...its know as fond...but sticking should not happen...

I know we're cooking to temp, but about how long did this whole cook take from hitting the flat top till it was done and resting?
I honestely could not give an exact time but I think less than 30 min. give or take.
I have the Steelamde flat top for glass ceramic stoves.. 3/16in thick steel, would i be able to also use this on a propane grill??

Hey me again from England. I’m going to try for the second time to season my new griddle tomorrow… clean… dry … heat up high for 15 mins then canola oil ( not too much ) cover inside and out apex 3 times … right ?😢
Yeah...we have videos on how to seasonon....I have done 3 in the last 3 weeks...I have transitioned to grapeseed oil after having so much success but thats a personal preference. Some will need more than 3 coats...my blackstone took 5, my traeger took 7, and weber took 4...

@@andreayoung2825 i was shooting around 440/475. The flat top has deference’s in the heating. I can reach those temps on low but just takes longer

I think I answered my own question…NO…it was too greasy and not a bit crunchy. I used too much salt as well. But that sauce you recommended was THE BOMB! Always learning…

I'm not a fan of that liquid smoke but I'm gonna try it. I have 12lbs of wings and BC is playing Temple this weekend. Also, only a Gator Freighter Squid would call them "flats". A lover, fighter and Tin Can rider calls them wings. Drumsticks and Wings. I can't wait to fire that sucker up.

Yeah just make sure you take time to thaw properly. Im sure it would have a ton of moisture so definitely would want to dry out for a day after the thaw in the fridge so dry out some.

Yes we can but that would be a complete waste of time and money. Not enough heat to keep up with the heat needed to constantly fry...especially wings which are really dense..

The chicken needs to come off in chunks and it needs to be glossy. So the point here is they're overdone and cooked too fast.

Love your channel, but I dunno. This feels like the wrong tool for the job.
If I had to choose of course the smoked buffalo wings take the crown. But honestly for the people that don't have that option these will work just fine. The fat did not render as mush as needed but I could have cooked longer as well.
Can we say: doing too much? MAN, dab them with paper towel while lying on paper towel. Season them and add baking powder at the end. Here's the key: spray them lightly with avocado oil before you place them in oven. DONE
Or do them on the griddle...different strokes for different folks...I actually prefer smoked over griddled and wouldn't even suggest the oven method over Grilled, Griddled, or Deep fried
