    Keema Pilau recipe
    Ingredients for Stock:
    2.4 litres water
    1 Tsp Cumin Seeds
    2 Tsp Salt
    1 Star Anise
    1 Tsp Whole Coriander Seeds
    1 Cardamom
    4 Cloves
    3 Small Cinnamon Sticks
    ½ Onion
    Ingredients for Meat:
    250g Salted Butter
    2 Small Onions - finely chopped
    2 Tsp Salt
    200ML Water
    1kg Mince
    1kg Basmati Rice
    1 Tsp Ginger
    1 Tsp Garlic
    1 Tsp Chilli Powder
    1 Tsp Garam Masala
    1 Tsp Coriander Powder
    1.5 Tbsp Cumin Seeds
    2 Green Chillies
    Method:
    1. Wash the rice until the water becomes clear and leave to soak in water.
    2. Preheat the oven to gas mark 3.5.
    3. Boil the 2.4L of water and add in the cumin seeds, salt, coriander seeds, cloves, cinnamon, star anise, cardamom and onion.
    4. Mix well and leave to simmer aside on a low heat whilst you cook the meat.
    5. In a separate deep pan, melt the butter and add in the finely chopped onions.
    6. Cook the onions on a high heat and add in the salt, continue to cook the onions until dark brown.
    7. As the onions turn really dark brown, add in the 200ml of water and cover for 2 mins. Be careful when adding this as this creates a lot of steam.
    8. Uncover and add in the mince. Brown the mince off on a high heat and add in the ginger and garlic.
    9. Continue to cook the mince until all the water has evaporated.
    10. After a few mins of the mince turning brown, add in the chilli powder, garam masala and coriander powder.
    11. When you see most of the water evaporating add in half the cumin seeds and continue to cook until you see the oil separate from the mince.
    12. Once you see the oil, strain in the stock from earlier. Bring to the boil and add in the pre-soaked rice.
    13. On a medium/high heat boil the rice for 3 mins. After 3 mins turn the rice from the bottom to the top and boil for another 3 mins.
    14. After 3 mins, add the whole green chillies and rest of the cumin seeds and mix the rice for a final time from the bottom to the top.
    15. Cover and place in the oven for 20 mins. (There should still be a small amount of water left, this will cook the rice fully in the oven.)
    Tip: Before placing your rice in the oven, check a grain by squashing it between your fingers. If it’s still quite hard you can add a small amount of boiled water before placing it in the oven.
