Nice insight! Concerning the dish: The "Veal Milanese" ( or "Cotoletta Milanese" ) is very similar to the - also very iconic - "Wiener Schnitzel" ( = Schnitzel Vienna style ). A dish of almost legendary status ( at least in Europe, don't know bout the situation in the US ), from the national cuisine of Austria. Some sources / theories assume the "Cotoletta Milanese" might have been the model for the "Wiener Schnitzel".
I recently met the Scognamillo Family at Patsy's. What a wonderful experience. I tried to cook the Chicken Milanese (quality veal was unavailable) as shown on this RUclips. Surprisingly the Chicken was ok, but not like Chef Sal. I need more practice, back to the kitchen. See you soon at the restaurant. for a great dinner. Hopefully a few tips from the Master Chef Sal.
