Googles and gloves are ideal here, additionally the lid on the liquid nitrogen should be closed when it's not being poured, it stops the nitrogen getting wasted and prevents as much nitrogen build up in the air (which is one of the dangerous things about liquid nitrogen, it displaces the Oxygen in the air so there's not enough to breathe and then you feel tired and sleepy can pass out and well expire yourself.)

Things with oil go rancid, which can make your tummy hurt but won't kill ya, but it also tastes/smells bad so it’s easy to tell. Honestly, it’s not even common sense to be able to tell when things are actually bad, it’s instinct, just use what nature gave you and you’ll be fine. If it smells, tastes, looks, or feels bad, don't eat it. If it gives you bad vibes, don't eat it! Even before the expiration date, things go bad all the time, listen to your instincts, not the label lol.
side note: the taste bud receptors for "ouch too hot" and "ouch too cold" are different and both at the same time flavor wise has been compared to hell fire. reasonable to guess the spicy ice creams are most likely not going to be a fun time
It's very easy to confuse our temporature receptors If you get a few hotdogs, make half of them very cold (freezer) and the other half quite warm (touch safe), lay them alternating, and place your hand on them all, it will feel like they're all scorching hot
Love how E&K talk about greek yogurt when eating the pickle ice cream, because if you mix greek yogurt and cucumbers (the pickle veggie before getting pickled) you literally get a greek dressing sauce called tzatziki, often used in many recipes in Greece.
Well also the acidity of the pickling solution/juice would to a degree curdle/sour the base since it is mostly milk, and so the taste would be similar to cultured dairy products like greek yoghurt which have that distinct sour taste

i really appreciate you guys adding good captions, sound can be a lot for me sometimes but it's hard to make out words with low volume and most youtubers (even really popular ones) don't add captions which just makes for an unpleasant time. you always have captions and they're super descriptive ("seductive electronic music" is a favorite of mine) so i can even watch your videos muted! it's great and i'm glad you do it, it's part of why i always watch your videos when i'm stressed :D
I'm autistic and it's hard for me to hear words so i always like captions. Automatic ones are ok but those are better. Also English is not my first language but for me it's almost the same with my native language. Unfortunately in videos in my native language there are not even automatic ones for some reason

In the Victorian era it was very popular to use molds to shape your ice cream and to work with the molds and many tools Agnes made for ice cream she also invented a lot of flavors. And during the Victorian era ice cream wasn't just a dessert they could also be palaet-cleansers and part of meals. Ice cream was new and they experimented a lot with it. What we know as ice cream today are just the sides of it that stuck around. The old recipe Agnes made for cucumber ice cream is supposedly really refreshing and very nice on a summers day

One of my favorite flavors to make with the sweetened condensed milk recipe is Thai Iced Tea Ice Cream, where I'll steep the teabags in the warm milk/cream and then make the ice cream out of it. I'd be in TROUBLE if I could make that regularly within seconds. Happy, but very, very full. :🤣

Having experimented with making at-home ice cream, I can tell you that actual ice cream has egg yolk in it specifically to make it creamier. The creamy texture of ice cream actually comes from turning the cream into a custard, because the cream has too much water compared to the lipids and proteins that help it keep an amorphous structure instead of crystallizing. For some people having two egg yolks in half a gallon of cream is enough, other people might use six, but the process of "tempering" is just bringing the cream up to a light simmer in a sauce pan and slowly add it to the egg yolks, sugar, and flavorings in a separate bowl. You want to do it slowly enough that the egg yolk completely integrates into the cream, but it's not too important to add x amount of cream to the mixture every second, because the final step is letting the mixture cool a little bit and filter it through a cheese cloth or paper towels to sift out any gross egg bits. You just need to make sure to bring the ice cream custard up to 170-180 degrees fahrenheit after the egg is added. Also, you should make some pickle ice cream with just the juice and no food coloring if you ever need to prank someone.
Not sure if you are aware, but they make stainless steel ladles for liquid nitrogen dewars. Would be safer than trying to pour from the whole thing, and would give you a way to do controlled measurements

We have a place near us that makes ice-cream with liquid nitrogen. It is very good and it does taste better than store bought. Also, Trader Joe's used to have a milk tea boba ice cream and it was so good. The frozen boba were a different texture but not bad at all.
You can do the same thing by taking dry ice and put it in a food processor. It grinds up like snow. Add a little at a time to your ice cream mix as it's mixing in your stand mixer until the right consistency.
So fun to see gastronomy on this channel! Maybe another thing you could do continuing the cursed food idea is sponge cake. They can be made using a microwave, paper cups, and one of those compressed air whip cream makers.
The uh, the frankenstein ice cream is referred to as Rocky Road in Aus. It's pretty common over here, I've never tried it bc of allergy reasons but yeah, pretty common.

with the pickle ice cream - a common buttermilk replacement in baking is made by adding vinegar or lemon juice to milk, so you essentially made frozen sweet buttermilk. all to say the yogurt/fermented taste makes sense :D
In Northern Europe, herring parfait is an actual food (e.g. for an entree in Easter dinner) It's really good! Salty or pickled flawors can be really tasty served frozen in a cream base.

You need to do melted marshmallows in the ice cream (like how you would melt them for rice crispy treats). You can add butter too for saltiness. But some melted marshmallows, little bit of chocolate, and crushed graham cracker would make delicious s’more ice cream!
Ooooh! I did this once as a science technician in a secondary school. It was a big taster day for year 6s coming from primary into secondary. I ate so much ice cream I nearly threw up. It was very tasty. Couple of health and saftey things. Use googles, use gloves and close the lid on the liquid nitrogen please it dangerous to leave to open and it's how people accidentally unalive while using it.

I use 1/3rd cup of sugar, 2 teaspoons vanilla, a pinch of salt, 1 cup heavy whipping cream, and a 1/2 cup of milk. Makes a very creamy ice cream.

Two words. Ninja. Creami. It's so dangerous. You do have to prep ahead, but it only takes a couple of min to spin some when you want to eat it.

If you do it again, you can pre temper your eggs with a sous vide immersion cooker. You can leave them in the shell, and put them back in the fridge till ready.

Having experimented with making at-home ice cream, I can tell you that actual ice cream has egg yolk in it specifically to make it creamier. The creamy texture of ice cream actually comes from turning the cream into a custard, because the cream has too much water compared to the lipids and proteins that help it keep an amorphous structure instead of crystallizing. For some people having two egg yolks in half a gallon of cream is enough, other people might use six, but the process of "tempering" is just bringing the cream up to a light simmer in a sauce pan and slowly add it to the egg yolks, sugar, and flavorings in a separate bowl. You want to do it slowly enough that the egg yolk completely integrates into the cream, but it's not too important to add x amount of cream to the mixture every second, because the final step is letting the mixture cool a little bit and filter it through a cheese cloth or paper towels to sift out any gross egg bits. You just need to make sure to bring the ice cream custard up to 170-180 degrees fahrenheit after the egg is added.
Also, you should make some pickle ice cream with just the juice and no food coloring if you ever need to prank someone.

Not sure if you are aware, but they make stainless steel ladles for liquid nitrogen dewars. Would be safer than trying to pour from the whole thing, and would give you a way to do controlled measurements

We have a place near us that makes ice-cream with liquid nitrogen. It is very good and it does taste better than store bought.
Also, Trader Joe's used to have a milk tea boba ice cream and it was so good. The frozen boba were a different texture but not bad at all.

You can do the same thing by taking dry ice and put it in a food processor. It grinds up like snow. Add a little at a time to your ice cream mix as it's mixing in your stand mixer until the right consistency.

with the pickle ice cream - a common buttermilk replacement in baking is made by adding vinegar or lemon juice to milk, so you essentially made frozen sweet buttermilk. all to say the yogurt/fermented taste makes sense :D

In Northern Europe, herring parfait is an actual food (e.g. for an entree in Easter dinner) It's really good! Salty or pickled flawors can be really tasty served frozen in a cream base.

You need to do melted marshmallows in the ice cream (like how you would melt them for rice crispy treats). You can add butter too for saltiness. But some melted marshmallows, little bit of chocolate, and crushed graham cracker would make delicious s’more ice cream!
Ooooh! I did this once as a science technician in a secondary school. It was a big taster day for year 6s coming from primary into secondary. I ate so much ice cream I nearly threw up. It was very tasty.

Oh man, there used to be a liquid nitrogen ice cream place near where I used to live. I loved that place. It was great to get to customize the ice cream exactly how you liked it. Sadly it didn't survive the pandemic. 😢
