Also, what are your thoughts on using Sake instead of Shaoxing wine? I can get sake within walking distance, but have no idea where to find Shaoxing wine. Thanks for any direction. * Update: I tried using Japanese Sake and it turned out great! I also dusted the chicken with all-purpose flour in the marinade. I think a little bit of flour helped the chicken to retain the marinade. Cooked up very nice using heat number 7 on my induction stovetop. Ate 2 full servings, had a nap, and ate the remainder soon after! Great recipe.
I don't think vinegar is a good substitute for the wine. If Shaoxing wine is not available, dry sherry or Japanese sake are good substitute. If you do not wish to have alcohol in the dish, I would skip the wine, but add a bit of chicken bouillon to the sauce to enhance the flavor.
