  • Today we're making one of my favorite holiday appetizers! Mushroom pinwheels!!! This recipe is super easy to follow, tastes like you've been baking for hours, the whole house will smell delicious, YES, lets make this!

    Ingredients:
    3 tbsp olive oil
    1 onion, finely diced
    16 oz mushrooms, chopped
    1 tbsp mayo
    1/4 tsp salt
    1/4 tsp black pepper
    1 garlic clove, finely diced (I used 2)
    1/2 cup parmesan cheese
    1 1/2 cups mozzarella cheese
    1 pkg puff pastry, 2 sheets
    1 egg + 2 tbsp water, for egg wash
    Directions:
    Wash and dry the mushrooms. Finely dice up the mushrooms, onions and garlic separately.
    To a pan over medium high heat, add in the olive oil. Saute the onions until just about translucent. Then add in the mushrooms. Cook for a few minutes, until the mushrooms shrink in size. About 3-5 minutes. Once cooked, add your mushroom mixture to a bowl.
    To the mushroom mixture, add in the raw garlic, salt and pepper, and parmesan cheese. Mix until combined. Set it off to the side.
    To a parchment lined baking sheet, unfold and roll out the puff pastry sheet. Take half of the mushroom mixture and evenly spread it out over the puff pastry in a nice thin layer. Take half of the mozzarella cheese and sprinkle it on top of the mushroom layer.
    To roll up the puff pastry, choose whichever side is the longest. Carefully roll the puff pastry from one end to the other. Combine 1 egg + 2 tbsp of water to make an egg wash. Brush the egg wash all over the puff pastry.
    (repeat using the second puff pastry sheet and other half of the mushroom mixture)
    Slice your mushroom log into 1 inch thick slices. Arrange them on the parchment paper leaving some room for spreading during baking.
    Into the oven at 400 degrees for 15-20 minutes. Enjoy!
