Ingredients
Makes about 6-8 hand pies
1 puff pastry sheet (14 oz - 400g)
Caramelized Onion
2 medium onions ,sliced
1 tbsp (14g) butter
1 tbsp (14g) olive oil
1 tsp (5g) sugar
salt
Mushroom Filling
1 pound (500g) mushrooms ,sliced
2-3 cloves garlic
fresh thyme
1 tbsp (15ml) soy sauce
Salt and freshly ground black pepper
1 cup (100g) cheddar or gruyere cheese ,grated
For Topping
1 egg , beaten
Parmesan cheese ,grated

Made these on Christmas Eve. They were SO GOOD. And very rich too. The only thing I did different was adding fresh spinach, gently wilted in the same skillet used for the onions and mushrooms.

Made these earlier and they were delicious. I put in extra garlic to use up the last of the bulb and that was probably a mistake, but it was still great. Still have some leftover for lunch tomorrow and will definitely make these again.
