We used Belize Sailing Vacations and had Danny as our captain and Hannah as first mate. We went with one of the smaller cats they had but it looks like they don't have those any more, just bigger 45-50 ft ones. If you can get a few other folks to go with you it ends up not being so expensive. I would highly recommend the trip, just an amazing country and I learned a lot of sailing during the week. They offer ASA courses as you are on your trip so you can be very hands on if you want.
Richard Widmann does one on one work with you on your boat, I can see if it's OK to post his contact info. If you are looking at generally learning about sailing, in the US you can go take a course with any school out there. We did ASA courses, they were fun and informative and give you an idea of what you are getting into. Outside the US I am not really familiar with what's available but if you join a sailing group on Facebook in your area you might be able to find some ideas there.
